Mexican Chicken Soup

Oh my gosh!!!! Way better than our local Mexican Restaurant!!! I used a rotisserie chicken, added corn, used a can of fire roasted tomatoes instead of fresh. Our Mexican restaurant always serves it with a big bowl of rice, so I made my favorite which is from this site, "best Spanish rice". It is amazing! My husband who doesn't even eat soup, gobbled it up!!! Don't leave out the avocado it makes the soup!!!!

Best Spanish Rice

This is the best Spanish rice. I have been making only this now for the past year. No more boxed mixes for us. You can vary the salsa to your tastes. I've tried many different types and it always turns out. You don't have to use chicken broth. Most of the time I use water, just salt the onions, sauté the rice and salt the rice when you add the liquid. This rice is BETTER than what our local Mexican restaurants serve!!!

Hot Ham and Cheese Sandwiches

I used unusually soft ciabatta rolls for the bread, sautéed the onions first and left out the dill seed(didn't have any). These were great I used shaved tavern ham from the deli and smeared the spread on both sides of the rolls. My husband went crazy for them. Served with homemade tomato soup, what a meal!! Will definitely add to our dinner rotation for the cold months ahead!

Cracked Sugar Cookies I

These are completely addictive!!! My husband and kids love them. I don't change a thing....they are simple but scrumptious every time. Be careful not to over bake them....

Peanut Butter Chip Chocolate Cookies

These cookies are ridiculous!!! They are so soft and chocolatey! My family of four can polish off a batch in 48 hours easily! They are the perfect combination of chocolate and peanut butter!!! What a treat!!! You will not be disappointed.

Cranberry Orange Cookies

These cookies are amazing! Interesting my 7 year old son who doesn't like most cookies gobbles these up and my 21 month old loves them too! They do not need icing added extra zest and 2 1/2 cups of dried cranberries! No one in my family can stop eating them! You will not be disappointed in these.

Mama's Asian Chicken and Rice

This recipe is fantastic. I doubled the sauce as others suggested, it was perfect! I added the green onions when I added the sauce so they could really add to the flavor. We will definetely eat this often in our house. No need for take out!

Downeast Maine Pumpkin Bread

This pumpkin bread couldn't be easier or more moist. I used 1/2 cup oil and 1/2 cup vanilla yogurt. I also reduced sugar to two cups. Turned out perfect. Even better with some cream cheese frosting.
