Easy Pasta Fagioli

It seemed like I was making a marinara sauce. I ended up omitting the beans, adding a can of minced clams with their juice, and serving the delicious sauce over cooked thin spaghetti! An entirely different recipe, but it was really good!

Aunt Anne's Coffee Cake

Wonderful old-fashioned recipe. Reminds me of Cinnamon Flops. Moist and delicious, easy to prepare. My only change was I used half brown and half white sugar for the topping, and baked it in a 8 x 12" pan. My husband and I both loved it. Thanks for the recipe!

Black Bean Vegetable Soup

Great taste, but thin, something missing. I like a thicker soup, so I added 1 stalk chopped celery and 3/4 cup rainbow radiatore pasta during the last 10-15 minutes of cooking (lid off), instead of adding another can of beans. Used 1 can black beans and 1 can of kidney beans (mixed them together). With my changes, I'd give it 5 stars and will definitely make it again! Terrific with grated cheddar on top. Thanks for recipe!

Taste of Home Butterfinger Cookies

These cookies are rich, but they are fantastic for peanut lovers. I added 1/2 cup chopped cocktail peanuts (no skins). They do not spread out a lot, so make big balls and flatten them slightly. Cool 1-2 minutes on pan before removing to cool on rack. I mixed in the chopped candy by hand. I sent these with other cookies for x-mas and had two requests for the recipe! I may try reducing the number of candy bars next time.

Eggless Sweet Potato Casserole

Better than the recipe I have been using - eggs not necessary! Just the right amount of sweetness. The hint of orange is nice, and the crunchy topping. The relatives loved this at Thanksgiving and asked for the recipe. Thanks!

Creamy Baked Cheesecake

Delicious and creamy. I made a vanilla version - used 1 tsp vanilla and left out the lemon. Used a chocolate crumb crust. Also, did not have any sour cream and used vanilla yogurt - it actually was good! although I would use sour cream if I had it. I would make it again...hey, this is the lemon cheesecake I always make and I didn't recognize it! It's good.

Deep Dish Brownies

This is a larger version of Best Brownies that I have made before. They should only be baked 20-25 minutes or else they will be dry. The timing is written wrong in this recipe. If baked the appropriate time, they are excellent.

Apple Crisp II

Nice crunchy crust - I doubled it, but it was too sweet and could not taste the apples. Also, I decreased sugar on apples and did add the water - big mistake - got applesauce. Next time, I will leave out the water (water + sugar = syrup; if you decrease the sugar, leave out the water or you will get applesauce like me!)

Pumpkin Cheese Pie

I thought this pie was wonderful. Definitely needs a deep-dish pan. Used a shortbread crust, and added 2 Tb brown sugar and 1 tsp vanilla to the filling so it would not taste "bland." Tasted good and creamy like cheesecake. I will be making this one for Thanksgiving!

Pumpkin Cheese Pie

Really liked this pie! I used a shortbread crust, and added 2 Tb brown sugar and 1 tsp vanilla to the filling for extra flavor. Also needed a deep-dish pie pan. I will definitely be making this for Thanksgiving and keeping this recipe!

Bake Sale Lemon Bars

I've made these many times. This recipe is the greatest, just the way it is! I would suggest trying these just the way they are, before you mess with the ingredients. I made them for a BBQ and people could not stop eating them.

Boscobel Beach Ginger Cake

Moist and delicious. I thought the batter was not sweet enough, so I added 1/4 cup granulated sugar - I'm glad I did. Also omitted the ginger root as I didn't have it. Might be good with some custard sauce.

Made these this summer. They were wonderful! So easy, and yet elegant enough for company. We made them according to recipe, only brushed them with plain olive oil. Used large fresh sea scallops.

Chocolate Zucchini Bread I

Very good and moist. The melted chocolate was speckled so I recommend stirring it in before adding the zucchini (which was cold). I peeled the zucchini to avoid the "green" look and grated it fine, so hardly detectable. My chips sank to the bottom, as the batter is rather thin. Smaller chips would work better. But overall, delicous and will definitely make it again!

Spicy Bean Salsa

Very good! I used 1 cup frozen corn, 3 green onions, 1 cup (increased) red/green bell pepper, 2 green and 1 red fresh jalapeno peppers, 2 fresh diced tomatoes, 1 bunch cilantro chopped, 1/2 tsp cumin, juice of 1/2 lime, and my own oil/red wine vinegar dressing - very good. Could leave out the lime.

Beer Dip I

This recipe is a keeper! I noticed some people had trouble with lumpy cheese. All you have to do is grate the cheese fine and mix together with the creamcheese in the food processor - let it run until it's smooth. The beer gives it a great flavor, and we love pretzels. The husband said, "don't lose that recipe!"

Ham and Cheese Picnic Bread

Delicious bread! I used Jack and cheddar and was good. Had to refrigerate because it contains meat, and was especially delicious toasted (ham warm, cheese melted). I added 1 Tb more of margarine and sugar. Next time, I am going to try rolling it out and making a roll so the filling appears spiraled. Husband loved it.

My husband liked them, but I thought they were way too sweet and too much choc chips, more like candy. I also made the other version which is on this web site - has a little less sugar and only 1/2 cup choc chips and I thought were much better.

Chantal's New York Cheesecake

Very creamy and velvety smooth! One of the best cheesecakes I have ever had - couldn't stop eating it! I made it light - used Neufchatel, 2 eggs and 4 whites, and light sour cream - and it was still delicious! (use 2/3 cup milk with Neuf. as it is a little softer than regular cc).
