Pistachio Crusted Chicken

Very easy and tasty as is, no sauce. Be careful that the topping does not burn. If you cover it to prevent burning, the topping will get soggy, so leave time to crisp it up. Can be done with frozen chicken breast, just add extra time.

Sweet, Sticky and Spicy Chicken

Delicious chicken that I will make again! Took reviewer suggestions and coated chicken with cornstarch. Stir fried onion, carrot and green beans first. Then chicken, added sauce and veggies. Cooked for about 5 minutes. Topped with cashews and served over Jasmine rice. YUM! Will DEFINITELY make again!

Penne Rosa with Parmesan Crusted Chicken

Very tasty and easy! Took another reader's suggestion and made homemade alfredo (super easy) and added red pepper with the mushrooms and spinach. Did not have any eggs, so I dipped the chicken breasts in mayo, then the parm cheese. Everyone loved it! Nice bit of spice! Will def make again!

Slow Cooker Chicken Tinga

Very good and easy! Thought it would be very spicy, but even with the jalapenos and the adobo it was not. Used as quesadilla filling and it was delicious with avocado and cilantro sour cream. Also as soft taco filling. Used leftovers as chili base with black beans and corn. Served with rice, cheese, chips and other toppings. It was GREAT!! Will definitely make again.

Sweet Potato Gnocchi

These were wonderful! They were so easy and once the sweet potatoes were cooked, were a snap to assemble and cook. Omitted nutmeg and garlic, still were tasty. May add in next time. Served with Pork Tenderloin with Mushroom Ragout and they were scarfed by my two sweet potato hating family members (along with a request to make again). Liked the idea of serving with a little sage brown butter next time!! Second time: Added 3 cloves of garlic shredded on a microplane. Added 4 T browned butter with 1 T dried sage, juice of 1/2 lemon and topped with shredded parm cheese. YUM!!!

Southern Pimento Cheese

YUM!! Very easy and tasty! Used small jar (2 oz.) pimentos because that is what I had and added a small can of green chilies. Served with Crackers and red pepper slices. So many possible uses for this!! Will definitely make again!!

Slow Cooker Chicken Stroganoff

Tasty and easy! Used boneless chicken thighs and followed the directions exactly. The meat roasted in the crock pot was wonderful. Only change was that I added halved mushrooms just before adding the cream cheese and soup. Created great texture and taste. Served over noodles and it was a HIT!! A little roasted broccoli with it and the meal was complete.

Melinda's Porcupine Meatballs

We baked them in the oven and used a mixture of dried onion soup and a can of mushroom soup in place of tomato sauce. We also sauteed onions, carrots, and celery before adding to hamburger. Added sauteed mushrooms before serving over mashed potatoes. DELISH!!

Oxtails with Gravy

Very good and filling! Used suggestion (ala Julia Childs) to brown tails first for 40 min at 400 with onion, celery, and carrots deglazing pan with red wine. Cooked in slow cooker for 5 1/2 hours with ingredients (minus season salt). Added sauteed onions and carrots (don't saute in bacon grease next time--flavour too overpowering). Served over rice. Will try with potatoes next time. If planning on doubling gravy, double oxtails for more meat.
