Cha Cha's White Chicken Chili

Garden Veggie Pizza Squares

This is a great semi-healthy appetizer for a party. It looks pretty with all of the colorful veggies. I do cauliflower, broccoli, orange or yellow bell pepper and red and green onions. A nice low fat variation is adding 4 oz. of sour cream in place of the cream cheese, low fat, of course. Thanks for a terrific recipe!

Peach Pork Picante

This was really good and very easy to make. I had to get the peach preserves because I normally don't keep that in the pantry, but this is a great anytime meal with items you would already have on hand. Thanks for this recipe! This will be in our regular rotation from now on.

Summer Fruit Trifle

I made this for an end-of-the-school-year faculty party. I used organic vanilla yogurt from Wegmans. It added a lot of flavor to it. This went fast and the presentation was so lovely.

Scottish Shortbread IV

We added more vanilla to make the cookies just a tad sweeter. They came out so buttery and delicious! Also, we used cookie cutters to make the shapes more uniform. Thanks for a terrific recipe. My hubby LOVES them!

Downeast Maine Pumpkin Bread

This was incredibly moist and perfectly spiced. I tried to cut a few calories by using Egg Beaters instead of real eggs and replaced one cup of white flour with whole wheat flour. I don't think anyone could tell the difference. Thanks for a great recipe!

Cheesy Ranch Potato Bake

This dish was impossibly easy and very tasty. I used light ranch dressing and added in a chopped cooking onion for flavor. THe light ranch was so good, and you can't even tell the difference! Thanks for a wonderful recipe!

Fantastic blend of asian-inspired spices and herbs. My husband and I tossed in chicken to simmer with the sauce. I added a little more broth to help with the bulk. Thanks for a great recipe and I'm sure to use it again!

Catherine's Spicy Chicken Soup

This is a great crock pot meal. The chicken was so tender and pulled apart easily. I let the soup cook for about a hour longer then suggested in order to thicken the broth. Instead of boullion, which is loaded with sodium, I used four cups of low-sodium chicken stock. I didn't miss the extra salt at all! Excellent!
