Fluffy Pancakes

The first time I made these I added bananas and chocolate chips. They were tasty but not my favorite. The second time, I followed the recipe without any extras and they turned out to be the best pancakes I've ever made. The boyfriend and I finished the whole batch ourselves. Will definitely make again! (Oh, I did use almond milk instead because it's all I had. Still fantastic!)

Pan Sauce Chicken

Pretty amazing for being so simple. I only cooked and halved two breasts, with a little less wine and broth. I also didn't use seasoned salt cause I couldn't find mine. It turned out fantastic. I love that the ingredients are things you almost always have in your kitchen. Definitely making this again!

Rhubarb Cheesecake

This was fabulous! I didn't change any of the measurements, but did use stuff like whole wheat flour, organic sugar, low-fat cream cheese, low-fat sour cream... Was definitely the hit of my movie night! Served it with a slice of strawberry on top and everyone just gobbled it up; even those that had never had rhubarb before.

Shrimp and Feta Cheese Pasta

I made this a few weeks ago and it was excellent! Next time I will definitely use frozen shrimp instead of precooked. Like others here, I increased things like white wine and olive oil. Definitely made it better for me. Also beware of putting too much feta. The recipe's amount definitely isn't too much. I'm new to this though, and at first I almost had the right amount, and then accidentally put way too much. Too much feta will ruin it ha ha. Before my mistake it tasted great. My blunder aside I totally enjoyed this dish!

Ham, Basil, and Feta Scrambled Eggs

I made these the other day and they were simple and delicious. I cut back to I think a teaspoon of basil like others and it was just the right amount for me. I'm definitely making these every time I have leftover feta. =D Thanks!
