Cilantro-Lime Dressing

I always end up having cilantro go bad in the fridge after using half of it for another recipe. I have now found a use for the leftovers. This dressing was perfect. I love anything with lime so I doubled the lime juice and reduced the honey. The cilantro was not overwhelming at all. I served it on a salad of romaine, stir-fried chicken marinated in lime juice and soy sauce, sauteed mushrooms, avocado, green onion, almonds and cheese. My husband raved over it.

Delicious Mushroom Soup

Very tasty soup. I added garlic and carrots and extra celery. Did not blend the soup. I'll use less soy sauce next time but that is a personal preference.

Lee's Incredible Momos

Authentic momos would not be made with beef as many people from this area of the world are Hindus. Try using ground chicken, goat or pork. Cumin is also a necessity to differentiate it from goyza or Chinese dumplings. Also, momo is made with round wraps and not the square won ton wraps called for in this recipe.

Cottage Cheese Chicken Enchiladas

My husband raved and raved over these. They were exceptional. The only changes I made were to dip the tortillas in the enchilada sauce before filling them to ensure they wouldn't dry out during cooking. I also added some minced garlic to the cottage cheese mixture. Next time I wouldn't add salt to the cottage cheese. There is plenty of sodium elsewhere in the dish and it all blends together when you dish it up anyway.

Spinach Enchiladas

Yummy. I added some cooked chicken. The spinach tasted great but gave the enchiladas a strange texture. I added garlic salt, cumin, chili powder to the chicken for added flavor.

Chocolate Waffles I

The waffles were very tasty. I wanted more chocolate flavor so I increased the cocoa and added some vanilla. I didn't make the sauce, but instead served it with strawberries and whipped cream. Perfect Valentine's breakfast.

Rich Italian Sausage and Potato Soup

Fabulous. My husband raved over this which he rarely does. I added some grill seasoning and a pinch of curry as well as half a thinly sliced red pepper. I loved, loved, loved the texture of the kale.

Onion Mustard Buns

Quite Tasty. I was hoping for more onion-mustard flavor but they really just tasted like regular dinner rolls with a pretty yellow tint to them. Next time I'll double the mustard and onion to get a more savory flavor.

Ultimate BLT Salad

Pizza Dough I

The key to this dough is probably to use instant yeast as opposed to active dry. Instant yeast DOES NOT need to be proofed first therefore it yields a fabulous last minute dough. I used it for Stromboli and I couldn't have imagined it being better. Think and chewy.
