Emily's Famous Hash Browns

Sometimes, you just have to have some good hash browns for breakfast. These were great - quick and easy. I used maybe 3 T of oil (a mix of olive oil and bacon fat) and green onions. I cooked in a well-seasoned cast iron skillet - no sticking. Thanks for the recipe.

Cha Cha's White Chicken Chili

This is really quite good - I made it the other night. I made three changes - used a 7 oz can of jalapenos/omitted the green chili (couldn't find it), added a T of chopped cilantro and thickened with 1 T of cornstarch instead of mashing the beans. Delish - thanks for the recipe Cathy!

Bob's Stuffed Banana Peppers

Very tasty. I only used 1/2 t salt (for the sauce) and 1/2 c bread crumbs and 2/3 c of the sauce for the sausage. Definitely will make this again - thank you!

Sopa De Lima (Mexican Lime Soup)

Indeed light & refreshing...I prepared with chicken thighs and 2 large jalapenos. Very good - thanks for sharing. I ate half a bowl before realizing I forgot the cilantro - good without, even better with. I love limes too, BTW. :D

These were delightful. To avoid a trip to the market (no unsweetened squares on hand), I used 5 oz of extra dark chocolate and reduced the sugar just a bit.

Sweet Corn Tomalito

Favorite Corn Bread

This was great. I am positive the recipe did not need tweaking, but because I like what I like.......I added 1/4 c of sour cream to the milk (whisked), used 1/3 c sugar (ah, sweet on the 'dogs) and used melted/cooled butter instead of shortening. I used it to make baked corn dogs using Omaha Steaks gourmet franks. Simply delish! Thanks Carol.

French Baguettes

Very tasty - made by hand. I do not know what 'bread machine yeast' is, just used regular yeast. It's funny - every time I make fresh bread, DH is so impressed and cannot eat it fast enough. Even tries to sneak a slice (how does one cut a loaf without someone noticing?) :D

Foolproof Rib Roast

I made as written, except for some reason I drew a blank with temp'ing (for some reason I had it in my head to remove the roast at 140, that plus resting time...) - I cooked for 15 min too long, resulting in a medium roast (I wanted med rare). The only thing I would do differently is omit the salt. REALLY - this was a nice, no hassle way to cook a rib roast. Tasty! If you have a 5 lb roast, follow the directions. It will turn out. Jalapeno Hot Sauce

I made this with serrano peppers (about 1.5 lbs). I reduced the vinegar to 2/3 cups based on other reviews. The sauce was great! But I will add the full cup of vinegar next time - there will be a next time. :) Thanks Rayna!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

I used an 8 oz can of tomato sauce instead of the diced tomatoes and I did not add the cornmeal. Next time I will just to see what happens. Very good. In fact, my guests loved it. Plus it is good cold.
