Chewy Chocolate Chip Oatmeal Cookies

Yummy taste, but these absolutely need the extra 1/2 cup of flour that others have called for. I went back and stirred in an extra 1/4 cup into the remaining dough after I made the first half batch, and they turned out much better. I guess if you want a thin, almost lacy cookie, this is fine the way it is written.

Cranberry Nut Granola Bars

This is just so mind-blowingly easy that once you have the basic ratio of oatmeal to sweetened condensed milk down, you can customize at will according to what you and your family like best. I just use all old-fashioned oats to make things easier.

Veggie Skewers

This is really simple, but it is a really great combination of spices that brings out the flavor in just about any vegetable. We used red onions, red and orange peppers, cherry tomatoes, mushrooms and zucchini to create a vegetarian option for our July 4th cookout and everyone thought the skewers were wonderful.

Blueberry Coffee Cake

This is a quick, basic recipe. I didn't have the same problem with the baking time (8x8" pan for 22 minutes worked great for me) but I agree that it could use a bit more flavor...perhaps adding cinnamon and nutmeg in addition to the allspice as suggested.

Nacho Chicken Casserole

As recommended by other reviewers, I added a bit more flavor by using 1/2 can of diced tomatoes with chili spices, added a chopped onion, and replaced the mushrooms with olives. Next time, I might do all that and put the mushrooms in for a different flavor and texture.

Raspberry and Almond Shortbread Thumbprints

These went together well, although they did spread a bit. (I will put dough in freezer or fridge as suggested for a while next time.) I'm always looking for simple recipes my toddler can help me make, and this certainly fit the bill, especially since there is no egg to worry about.

Pretzel Turtles

I made these at Christmas with my 2-year old daughter. I followed some other suggestions and used the Dove caramels and the snap, or "windowpane" pretzels, which fit together perfectly. I also pre-toasted the pecans. Using the Dove chocolates does not make for a cheap project, but it does taste wonderful. This also fit my daughter's skill-level (fit square chocolate on square pretzel) and attention span.

Chocolate Cupcakes

This is a great quick recipe, requiring ingredients most people have on hand. I do agree with an earlier post that the directions are a bit misleading. The ratio of sugar to fat is off for "creaming." The cupcakes still turned out okay.
