Swanson® Black Bean, Corn and Turkey Chili

Red Snapper Livornese

This was a good recipe, my first attempt at snapper. Fish itself was a little tough (possibly overcooked slightly) but very tasty. The sauce is not overpowering and compliments the fish nicely. I did not have any olives, so those were omitted.

Blackened Chicken

Szechwan Shrimp

I am not a stir fry person, but I was feeling adventurous. I used this recipe as a base and added other veggies - broccoli, carrots, sugar snap peas, bell pepper. Served over steamed white rice. Good flavors, I enjoyed this.

Chicken Parmigiana

This was pretty good. Husband did not like it as much as I did. He prefers his parm fried. I liked this lighter version. All in all, 3 stars for simplicity.

Pumpkin Roll II

I have not perfected this yet. I have tried twice and both times the roll has been somewhat moist, making it difficult to roll and cut. It could be my fault. Next time I am going to completely let the roll cool before filling - I only let it cool 30 minutes or so. I may even put it in the fridge prior to rolling. Also, this is just too much filling for the roll. The filling spills out and makes a mess.

Fantastic Crab Dip

This was pretty good - could have been a 4 or 5 star if I had the green onions. I subbed a shallot and the flavor was pretty strong. I also added some tobasco but not enough to really make the dip spicy. I may try again but will definitely use the green onion.

Apple Pie by Grandma Ople

Delicious! I did as another reviewer recommended and added vanilla extract (1 Tsb), cinnamon and nutmeg to the syrup. Also poured the syrup on the apples and then did the lattice top and glazed with the remainder of syrup. This was my first attempt at apple pie and it turned out great.

This recipe was pretty good. I put in less butter than called for. Also added chocolate chips. I prefer another recipe I have that substitutes applesauce or yogurt for oil/butter.

This was just okay. I made this with mixed berries and served with some french toast. Okay, but I wouldn't go through the trouble again unless I had some berries to get rid of (like this time).

Spicy Grilled Shrimp

This was really good. I only used a pinch of salt... the tablespoon salt must be a mistake by the author. I did try this recipe once before and it was WAY too salty at a tablespoon. So salty I could barely eat them. A pinch was just right.

White Chip Chocolate Cookies

I thought these were really good. I had some white chocolate chips that had been sitting in the pantry a while and I was looking to get rid of them. This definitely did the trick. I halved the recipe and followed the authors instructions exactly. Very tasty!

Banana Pancakes II

Probably will not be making these again. I have found that using wheat flour (while healthier) makes pancakes a bit chewy. Also, chopping the bananas left little banana chunks throughout the batter - the husband did not care for this. Perhaps I should have beat the batter - I just stirred it with a whisk. Overall, buttermilk pancakes is preferred over this banana version.
