Baked Mac and Cheese for One

First time I have been inspired to post a review despite using the site for a couple of years now. I needed to use up an opened box of elbow macaroni and found this 'recipe for one.' This mac-n-cheese recipe was absolutely delicious. Loved the flavor and texture - very creamy. Some 'scratch' mac-n-cheese recipes seem to require too much flour or baking time and the texture can be very grainy. Not this one! Only changes - I omitted the worcestorshire and used a little extra cheese on top. Now, I just need to scale the recipe to serve several people and I will proudly prepare it for our next family gathering. Yummy!!!

Down-South Style Green Beans

These beans were very tasty (very similar to the the beans I learned how to make from my granny and mama). My comments: 1) The original poster must have had a saltier ham hock than the ones I get - as other posters have mentioned, I do add more salt. 2) I always use minced, fresh onion rather than onion powder. 3) I never use lard, bacon grease is the way to go. If you don't have a ham hock, you can really just use bacon grease alone. 4) For the reviewers who didn't care for the taste/texture of the beans - these are not haricots vert and are not intended to be crisp. These are southern-style green beans (as indicated by the name of the recipe) and if you like 'em, you like 'em - if you don't, you don't. Some people enjoy both kinds(like me). 5) And finally, if you want to get truly southern, serve these beans with real southern cornbread (NOT the sweet kind), cooked in a cast iron skillet. Don't discard the soup (the pot likker, as my granny would say) and don't discard the ham hock until you've picked the meat off of it and scattered it in the beans. You can also throw some small new potatoes on top of the beans for the last half hour or so.

Browned Butter Vegetables with Almonds

This was very tasty! My 4yo and 2yo enjoyed it as well. For those who didn't taste the 'nuttiness,' make sure you let the butter brown - this takes at least 10-15 minutes on low-medium heat - otherwise you just get the 'plain' butter taste. I also decreased the butter by 1/3 - still delicious. The almonds accented the dish perfectly. I served it with shrimp scampi and garlic bread.

Excellent basic recipe. If you like things highly seasoned, triple each spice (at least). I also add a couple of dashes of hot sauce to the egg/milk mixture.

Chorizo Burger

This was good. If we make again, we will cut the amount of paprika in the sauce in half - it was way too paprika-y for us. The burgers themselves were delicious - I took the advice of another reviewer and added an egg to the meat mixture. It was very flavorful but not too spicy for our 4- and 2- year old children.

I thought this was fabulous. I, too, minced the broccoli and onion very finely. I have also sub'd bacon grease for half of the butter and added cheddar cheese in with the cottage cheese. I bake mine in muffin tins. Yum!

Beth's Spicy Oatmeal Raisin Cookies

Delicious - I followed recipe exactly since it was my first time. I used old-fashioned rolled oats, not instant or quick. The cookies had a lot of texture. Next time, I may change it up by playing with the proportions of oats - maybe 1/2 old-fashioned and 1/2 instant. I would like to keep them chewy but not quite as textured. Can't wait to try it again!

Marinated Scallops Wrapped in Bacon

Very tasty! Prepared exactly as directed but only marinated for about 45 minutes which was perfect for us - the scallops didn't lose their texture and retained their distinctive taste. Will definitely make again.

Peanut Butter Noodles

Very, very good. Added julienned carrots, cucumber, red bell pepper and some leftover chicken I had on hand. I only had spaghetti noodles so used those. Finished with a squeeze of fresh lime. The kids, ages 2 and 4, gobbled it up. Agree with a previous poster that the recipe name doesn't do it justice - maybe 'Thai-Style Peanut Noodles,' instead?

Slow Cooker Enchiladas

I took the advice of another reviewer and 'flash-fried' the tortillas (approx 10 secs in very hot oil). I also left out the cream of mushroom soup as I didn't have any - substituted with sour cream. Delicious!
