Super Easy Chicken Fingers

These were easy & delicious. We punded out the chicken breasts and added parm cheese and pepper tot he breadcrumb mixture. Delish!

This was good. We left the skiins on the red potatoes. Next time I might try diced potatoes or wrapping the chicken in tortillas.

No Bake Cookies I

Sooooo easy and yummy chewy goodness. I used creamy PB & substituted Nestle hot chocolate powder out of a can and cut the sugar to only 1 cup. Worked GREAT!

Ham 'N' Cheese Pie

Way back when my mom & grandma used to make the pies & they were called Impossible Pies and I remember a whole bisquick cook book devoted to impossible pies of every nature with a variety of fill-ins. For this one I used peas because I don't like onions. I also used heart smart bisquick so it was healthier. I had to cook mine for about 35 minutes because it was still doughy in the middle after 25. This was very yummy and my picky husband even liked it.

Beef Taco Skillet

We loved this recipe! We followed the recipe and made no changes. It was very delicious. I wanted to add some seasoning because I was afraid it would be bland but Hubby said no. Just a little black pepper was all it needed. The tortillas were not gummy, just soft and hot and delicous. Next time I may try crispy tortillas for a change of flavor or texture & Hubby said using ground turkey would be good too and would make it healthier. We will definately make this again.

Chocolate Brittle Surprise

I was worried these wouldn't go over well as gifts for the girls at work. I had never made anything like this before and I thought "Saltines? Really?" But I did it anyway cuz it was easy. They were a hit! One girl polished off her whole container before we took lunch break!

Cajun Prime Rib Roast

Adding the Tony Chachere's seasoning really made the meat delicious! I have a huge shaker of the stuff that my mom gave me and I have never found another recipe that used it. Thanks!

Simple Turkey Chili

This really is delicious with ground turkey. I always use a large can of tomato sauce and a small can of paste instead of the crushed and a sprinkle of dehyds instead of the chopped onion. I also leave my beans whole and I usually use one can of red kidney and one can of chili beans. Yum!

Lazy Lasagna II

I saw a spot on the Today show with the lady who wrote the biggest looser cook books. She called her version Ravio-sagne. Tonight I left out the meat because it is Lent and I also left out the onion because I am lazy. I went the healthy route & used Whole Wheat Ravioli and Ragu Light layered with Mozz Cheese. It could not be easier! I will make this again and again because it was that delicious!

Aaahh! Potato Soup

This was delicious and so very easy. I used russets because the gold potatoes at my grocer were not good looking and I used half and half instead of heaby cream to cut the fat and calories a bit. It was still creamy and delicious. This recipe is a keeper that I will make again!

Six Can Chicken Tortilla Soup

This was so stinkin' easy! It took me literally 5 minutes to throw together and it was so delicious. I made one addition and added a can of pinto beans. I also used low sodium broth and no added salt corn & beans. I will make this again. Next time I might add cumin or other seasonings.
