Pumpkin Whoopie Pies

I made these for a work party and they turned out really well. I used my cook TBS cookie scoop as many recommended and it made the job very easy. I used parchment paper and baked them for about 12 minutes each. I also used the cream cheese frosting recipe. All told, it was a smidge sweet for me, but as much as I have a sweet tooth I prefer things that are not cloying this sweet. If I could deduct half a start for that I would. Next time I'll cut the sugar in the frosting and the cake by 1/2 each and I'm sure I will personally like them even more. Also, I set them up after they cooled and put them in tupperware in the fridge overnight. In the morning they were perfect, and didn't even stick to each other. This is part of why this recipe is so successful!
