Hummus Pizza

I loved this pizza! For the toppings, I sauteed one red bell pepper, one onion and a few large mushrooms. I used fresh mozzarella in place of monterey jack and this turned out perfect. I am not sure this would have been good with broccoli, so I'm glad I left it out.

Pizza Rolls

I rate this two stars not because of the recipe, but because this was a major flop for me. I think it had to do with our egg roll wrappers that this turned out so bad or because I am not used to frying things, but either way, this was a big mess. Sorry.

Easy Broccoli Quiche

This was a very good recipe, but I did change a few things. First, I used grated swiss cheese as a bottom layer of the quiche. I think mozzarella is too light of a taste for this tarte. Then I sauted the onions, garlic, and broccoli as directed, but at the very end I added some smoked ham. For the milk mixture, I used cream in the place of the milk, but only 3/4 cup and big spoon of crème fraîche and only three eggs. I skipped the extra tablespoon of butter and only added pepper as the ham gave enough salt. Finally, I for the last 10 minutes, I sprinkled some swiss on top and put my oven on broiler to gratiné the cheese.

Pina Colada Smoothie

The smoothie was very good and I definitely will be making again. Instead of plain vanilla yogurt, I added coconut flavored yogurt which I think helped a lot.

Strawberry Ricotta Stuffed Whole Grain French Toast

I found this recipe quite good. I did as another reviewer did and cut my strawberries thin and because of that I had no problem flipping them. With the extra strawberries, I cut them up and put sugar on them and once these were finished cooking, I put the fresh strawberries on top. Quite amazing!

Creamy Asparagus Pasta

I had no problems with this receipe except, like everyone else, it took a bit of time for the sauce to loose some of it's liquid. I cooked my asparagus for four minutes, strained it, and then rinsed it with cold water until the asparagus were no longer hot. I then cooked the garlic with the butter and added the asparagus. After that cooked for a minute or two, I added 3/4 cup of cream. To help thicken it up, I added some parmesan cheese. At this point I started my pasta and once that was finished, so was the asparagus sauce. Towards the end, I added half a lemon's worth of juice and then just before we ate it, I added the other half of lemon juice. Add sea salt, pepper, and more parmesan and it's great!

Carrot Rice

This was great! I did as others suggested and used vegetable broth to cook the rice. I used a teaspoon of chunky peanut butter in place of the peanuts! You must use ginger as it gives it an amazing taste and cilantro is a nice final added touch!

Curried Butternut Squash and Pear Soup

This was definitely a good soup and will probably make it again. I did as one reviewer suggested and added a half teaspoon of brown sugar and a pinch of nutmet and cinnnamon. I am not sure that this added anything more to the recipe, but nonetheless, this turned out to be a good soup.

Creamy Scallop Chowder

This was a very tasty soup! I did not have green onions, so instead I used regular onions. I did as another reviewer suggested and sautéed the scallops in the grease of the piece of bacon that I cooked before hand. I then added, in small pieces, the bacon to the soup. I only cooked the scallops for one minute on each side and then added them to the soup at the very last moment. Scallops should not be over cooked, otherswise they loose their light texture and become chewy and rubbery. I did as others and added some chives and a cup and a half of chicken stock as well as potatoes which made this soup filling enough as a main course.

Fig and Olive Tapenade

I thought this was a nice blend of flavors, but I was rather taken aback by the strong and somewhat over powering flavor of garlic. Next time I'll use less garlic, but nonetheless this was quite tasty and I will definitely be making this again. As other reviewers have said, goat cheese is a must for this recipe.

Candied Almonds

Wow is all I have to say. I just finished making these and they are amazing. I cannot stop eating them! I love that they have a perfect mix of being sweet, but not to the point of masking the taste of the almonds. I agree with other reviews that if you just keep on stirring that there will be a point when the nuts are done and there will be no more liquid left. It is very obvious once this change has occured as they go from being glossy to matte finish and look dry.

Crispy Orange Beef

I thought this was quite tasty. As other reviewers mentioned, it does take a bit of time to prepare, but overall quite manageable. I did not use orange juice concentrate, instead I just used regular orange juice. This was a tad bit on the sweet side, but I added some red pepper flakes to the sauce and that seemed to counter balanced the sweetness. Overall a good recipe and I would defintely recommend using regular oj.

Cream of Cauliflower Soup I

I was not very impressed with this soup. I did everything except for add the flour and milk at the end. It was good, but nothing amazing. I will not make this again as I think there are better methods for preparing cauliflower.

Spinach Brownies

Vest good recipe and definitely a keeper. I did make a few changes. I left out the butter completely. I used fresh spinach, and wilted them down with onions, garlic, and olive oil. For the flour, I used whole wheat, instead of all purpose. Other than that, I followed the directions exactly and it turned out very good.

Classic Vichyssoise

This was a good potato and leek soup. I did have problems, however, with the amount of butter called for. I did not feel like 1 tablespoon of butter was sufficient enough to stop the leeks, onions and potatos from sticking to the bottom of the pan. I ended up putting olive oil in so that they would not stick (butter would have been better, but a bit too high in calories). At the end, I puréed this soup with an immersion blender and topped it of with sea salt. I served warm with heavy cream mixed in the soup.

Black Pasta in a Pink Gorgonzola Sauce

Thought this was a great recipe and a nice change to my normal pasta routine. Since I live in France, most of these ingredients were very easy to find, so I did not have some of the same problems as other users. My only negative remark was the prosciutto. Next time I will add it towards the end as I felt like it was over cooked.

Whole Grain Waffles

These were great! I only had oatmeal, so used that instead of the flax seed and wheat germ. It worked out nicely. I just grinded up the oatmeal and it came out fine. Will definitely be making these again!

Sweet Potato Pie I

I really enjoyed this pie, however, found it just a tad too sweet for me. I reduced the sugar down to 2/3 cup, but next time I think I'll only use 1/2 cup. Also, I think I'll use brown sugar instead of white. Another thing, I think the nutmeg was just a bit strong, so next time I'll reduce it down to 1/4 of a teaspoon. But, overall a very good recipe and I'll definitely use it in the future!
