Salsa Chicken

This was very enjoyable, made it as the recipe stated and my husband said that the chicken was very moist and juicy. I used medium salsa and it was a tad bit too much spice for my taste but he thought it was perfect. I served this over rice and it made enough juices to flavor the rice too.

No Bake Peanut Butter Pie

This was so yummy and very easy to make! I "doubled" the recipe amounts to make extra and actually had enough for 3 pies. Everyone really liked it. For my 3rd pie I used vanilla wafers as a crust since I wasn't prepared to make 3!

Easy Creamy Pork Tenderloin

This was a success! I think its hard to find tasty crock pot recipes. I read other reviews and based on what I had in the cabinet, I used a big can of cream of mushroom, added French's fried onions, minced garlic, and a little white wine and poured over tenderloin. Makes enough sauce so I made rice to go with it. Cooked on high for 4 hours and came out good. I would have preferred to slow cook it on low for 8 hours but I didnt have that option! 7 yr old asked for seconds so it must have been really good!

I would not recommend using non fat yogurt! I had to add something to make it taste sweeter and went with chocolate syrup for the flavor and then it was okay. Next time I will stick to regular yogurt.

Spinach and Mushroom Frittata

As always I adjust the recipes to what I had on hand. I used fresh spinach and had no mushrooms or scallions. I added canadian bacon and lots of garlic! Came out awesome and a great healthy breakfast!

Easy, Cheesy Zucchini Bake

We thought this was great! Served it over rice and the kids asked for more. I had used leftover cooked zucchini & squash because I had it. Cooked ground turkey in garlic and seasonings. Added it to the baking dish and topped with veggies & sauce as directed with the cheese at the end.

Artichoke Chicken

This was great! I made some small changes as suggested. I chopped my chicken because its easier for the kids. Added it to a frying pan of onions & garlic, then added thawed out box of frozen spinach. Only cooked until chicken was partially done. Added this to the baking dish and put the sauce on top. I added a little extra of sour cream because I had it and to compensate for the added spinach. Forgot to chop the artichokes so I did my best with trying to mash it with the mayo, cheese, sour cream. I cooked small pasta (ditalini) and served this meal on top. It was so easy and really tasty. Hard not to have seconds!

Christmas Morning Pie

This was amazing. The only substitutions I made was eliminating the green pepper. I followed otherwise and found that if I added 2 more eggs it fit perfectly into the 2 pie dishes.

Ground Beef and Rice with Cheese

This was awesome! I made substitutions based on what I had. I used a 24 oz jar of spaghetti sauce,layered as stated but used 2 cups of shredded cheddar cheese and topped with French's crucnhy onions. I put it in a 2 quart baking dish as well. So quick and easy, definately using this again!

Very easy and tasty, I used salsa and chopped the chicken to cook faster. I also served it over rice. Will probably use more than one jar next time so i have some extra sauce to mix with rice.
