Chewy Chocolate Chip Oatmeal Cookies
With the following MODIFICATIONS, these cookies were the BEST!!
In addition to the complete recipe with walnuts, choc chips, baking soda, etc. I added 1/2 tsp baking powder, 1/2 cup more flour, 1/3 cup shredded sweetened coconut, 2 Tbsp more white sugar, 1/2 tsp cinnamon, 1/2 tsp allspice, 1/4 tsp nutmeg. Sifted the dry ingredients.
Pulsed 2 cups of the 3 cups of oatmeal in the food processor for about 4 seconds. This gave it a slightly finer, more traditional texture but it was still chewy and delicious.
