Peppermint Bark

very easy to make, very yummy and a very good gift to give... I did do this as directed the first time but found a few changes couldn't hurt. I found that using candy canes gave it a much better look. it crushes more to the red side verses the round are more to the white. I also added in 1/4 teaspoon peppermint extract to give it a kick to the white chocolate mix after I had melted the chocolate. I also freeze it until I am ready to eat or give out as gifts and it tastes great! This is very simple, very easy to make. the price to make this is so much better then buying it to give out as gifts. When coming from your kitchen how can anyone not like it? Thank you for sharing this is a kepper that I will not use every holiday season.

Grilled Filet Mignon with Gorgonzola Cream Sauce

I made this for Christmas and it was a BIG success! The only thing I would do different is cook the sauce first and let it cool and then spread onto the steak when they are done. I had no left overs just them wanting more! Thank you very much for sharing.

Grandpa's Peanut Butter Fudge

Before making this you should read what the others have shared as an easier route. I did this and found it very helpful. Make sure you have a candy thermometor and bring your mixture to an soft ball between temp. 235 no more than 240. Also an helpful hint was to spray your pot very lightly with a cooking spray along with your stir spoon of choice, this was a great tool. the sugar will stick to the side of your pan as it boils so this helps after cooking for an easier clean up. Once your mix is to temp. have your kitchen aid ready to go with the butter and vanilla and add your hot mixture to that and turn to speed 2 or 3 and check on it every 2 minutes to see is your mix is getting hard. I found in my kitchen aid the time was 14 minutes. Then I spread the mix on a wax paper lined (also spray very lightly with baking spray) smaller baking sheet. I left out on my counter until it was completly cooled, I lifted the wax paper and I cut into bit size pieces (using my pizza cutter) verses larger so I can gift out as gifts, using the smaller pans makes it thicker so if you cut small pieces you still get just enough in your mouth for a perfect bite. I freeze it until ready to hand out and it turns out perfect! Tastes great! You have to be willing to take the time this recipe needs, if you want to be quick in and out then try another recipe. I think some things don't need to be rushed and this is one of them. Thank you so much for sharing this recipe with me.

Chewy Caramel

VERY,VERY,VERY easy to make and VERY yummy to eat. So soft and so chewy. I have never had anything even close to this. It puts store package to shame... I did make a mistake in thinking if I placed on a wax paper lined baking sheet it would help me to lift out. Not a good idea as it will stick even if you spray it so my advice is stik to keeping it in a greesed baking sheet as it will lift out easier. I also cut into pieces with my pizza cutter. i went to a craft store and bought candy wrapper and after cutting them I rolled them in the papers to give out as gifts. I frooze them as well until I was ready to hand them out. I found they turned out just as soft, just as chewy and just as fresh by doing so. this way I can spread out my baking and not worry about anything going bad. Or stressing over baking everything thr week of the holiday. I have enough to do then besides bake. It worked for me so I hope it will work for you. Thank you so much for sharing.

Raspberry Salsa

A very quick put together dish. BUT the longer you let it sit the better. It's says anhour but trust me the next day is even better. I poured over creamed cheese and dipped with wheat thins, hmmmmm very yummy! Honey baked ham was the only place I knew that sold this different kind of salsa and now they no longer do :( SO thank you so much for sharing now I can enjoy all the time!

My son is allergic to eggs to I took out the real eggs and changed it to 3 TBS of vegie oil, 3 TBS water & 2 tsp of baking powder. He LOVED them and so did the rest of my family and my neighbors. I had enough to share!

Raspberry Fudge Balls

I think I figured it out on how to not get this dish to be messy in your hands or not hold up as you leave out for others to eat. I dipped mine in melted chocolate. i used 1 full box of Baker's Semi-Sweet Chocolate and melted it in the microwave starting at 1 minuted and then every 15 seconds until smooth. Then I placed into a mini-cupcake liners and sprinkled the almonds on top. I also let this set up over night which I feel helped. I also had fresh strawberry jam that I made during the season so I used that instead of Rasberry jam. Instead of using wafers I used Golden Oreo Wafer which are long and a smoother texture. I used this due to a friend ahving peanust allergies all the other packages were made in a peanut factory. They turned out really, really good. Thank you very much for sharing I will use this every holiday season!
