Linnie's Spanish Rice

I also sauteed the rice and garlic in about a TBSP of butter and only used 1/2 to 3/4 of a jar of medium salsa. Should have added some salt while cooking as it noticeably needed it when eating. Very tasty. My wife thought I spent a lot of time chopping onion, tomatoes, and bell pepper.

Slow Cooker Oats

I tried this recipe for the first time last night. I wqs concerned about the overnight time because my crock pot tends toward the hot side even on low and doesn't have a timer or warm setting. The other concern that I had was the amount of cinnamon and that one turned out to be the biggest one. The cinnamon just overwhelms eveythng else. Even though I had read a few reviews I neglected to put any salt in and I think that would help a lot. What I will change for next time - reduce cinnamon by half, substitute some milk for some of the water, add maybe a tsp of salt and increase the brown sugar by 1 or 2 TBSP.

Spicy Sweet Potato Chips

I got soggy chips and I left them in twice as long as called for. These need to be sliced to an eighth of an inch if your going to get chips. The spice level is good for me but too much for my wife.

Roast Sticky Chicken-Rotisserie Style

This came out great! I messed up the spice rub a little by forgetting to half everything so some things had two chickens worth and some had only one. I rotated the chicken in the oven once an hour so it would cook evenly. Five hours was perfect for the 4.25 lb bird. I did make gravy out of the drippings but should have de-fatted them first. Leftovers tonight!

Grilled Honey-Soy Pork Steaks

I had the pork steaks from the grocery store - had wanted blade chops but this was all they had. Found this recipe and the only substitution was lime juice for the lemon juice since that's what I had on hand. Seven minutes a side over charcoal and they were absolutely delicious. When my wife first saw them come home she wanted no part of them. When she saw them come in from the grill that changed in a hurry and once she tasted them all bets were off.

Zucchini Apple Pie

I tried this for the first time yesterday and came up a little short. I should have measured out the sliced zucchini to get four cups instead of assuming that two large ones would do it. They only produced 3 cups worth and I didn't have any more. That problem was exacerbated by having a deep-dish pie plate. I will try again and probably use 5 cups of zucchini and a tad more flour to cut down on the runniness. I was actually afraid it was going to be too dry after the sauteeing.
