Mini Pineapple Upside-Down Cakes

These little cakes are great! My husband ate 4 in one sitting. I actually didn't read the recipe carefully enough and put the cherries in with the pineapple--they still came out great. The only thing I would do differently next time is to just used the pineapple that is already cut up, since I ended up cutting up the rings quite a bit to get them in my muffin tims.

Baptist Grasshopper Pie

The reviewer below is absolutely correct--this pie is NOT alcohol free. I was making a grasshopper pie for a party and wanted to make a kid-friendly one also and used this recipe. Then I checked the bottles. My peppermint extract is 86% alcohol, while the creme de menthe is 30% (the standard grasshopper recipe uses 1/4 cup creme de menthe). If you do the math, you will see that the "Baptist" pie is actually only 35% less alcohol than regular pie (insert your own Baptist joke here). I used chopped chocolate instead of creme de cacao or chocolate extract because I didn't have either, so I'm not sure how much they contribute. Additionally in a side by side tasting everyone preferred the creme de menthe pie...the peppermint extract pie was described as "toothpasty".

Caramel Crispy Treats II

I have made this recipe several times since I needed a "no-bake" cookie recipe to make for my daughter's kindergarten class. This recipe was a HUGE hit with both kids and teachers! I used 5 bars instead of 4 because I was letting the kids break them and thought some might get eaten--none did, but 5 bars was extra good! I don't have an 11x7 pan so I used a 2.5 qt casserole. We stuck it in the fridge about 15 minutes. Yummy!
