Black Bean and Corn Salad II
This is one of our family's favorites. It's great as written, but to suit our preferences we've modified it a bit over the years. We add a second avocado, a little cumin and a splash of red wine vinegar. And we reduce the oil a bit. This is great with tortilla chips, over grilled meats, or tossed with toasted cubed bread to make a panzanella. You really can't go wrong. Just leave the avocado to the very end if you want it to look pretty. It gets mushy. We don't care. It still rocks.

Sweet Potato Casserole II
Excellent. Based on some other reviews, I used evaporated milk and halved the white sugar because I didn't want both parts of the casserole to be very sweet, just the topping. I made this to bring to Thanksgiving dinner because I know no one in my family really likes sweet potatoes, so if I messed up, no one would really care. But it was the highlight of the dinner. Everybody raved about it. I baked 6 yams and cooked it for maybe 35 minutes. It was really delicious. I'm a terrible cook and still managed to pull it off. Try it. Seriously.

North Carolina BBQ Sauce
A very good and easy recipe. Delicious, with one point off for the heat. I could only drizzle a tiny bit on my pork or my lips would burn. I love spicy foods and make a homemade ramen soup that'll give you palpitations, but this was INTENSE! I'll absolutely make it again, but I'll cut way down on the cayenne next time.
