Melt-In-Your-Mouth Meat Loaf

HIgh Five for this one...a tasteful meatloaf. I didn't have mushrooms to add to the meat, but my husband and I didn't miss them. My only change is to reduce the amount of salt. Next time I will use 3/4 tsp. Nice and tight texture and stayed together when sliced. I will be making this again.

Healthier Easy Sugar Cookies

This is a very simple sugar cookie recipe. I used slightly less sugar as someone else suggested - maybe an 1/8 cup less. The texture is great and it is a soft cookie. I had no problems rolling the dough into a ball. I put sprinkles on the cookies too. My husband loved them and they will be in his lunch bag tomorrow.

French Fried Potatoes

I did the quick fry and then a second fry. Delicious. My husband and I both thought they were as good as Five Guys or better. I used red potatoes. My mother always soaked her french fries in ice water before frying to get them crispy. The sugar water lends a sweet flavor to go with lightly salted fries.

Very easy recipe and exceptional taste. Another one of those recipes that tastes better a day or two later. It has a bit of a kick to it so you may want to cut back the cayenne pepper to a 1/4 tsp.

Apple Dumplings I

I made this using the suggestions posted. I cubed the apples and sprinkled with cinnamon and sugar per my tastes. I baked at 350 degrees for 20 minutes. While the dumplings baked, I prepared the syrup. The syrup part: 1/4 cup water, 1/2 cup each of white and brown sugar, 1/2 cup butter and the 2 tsp of vanilla. I cooked the liquid on top of the stove over low heat and brought it to a boil. This helps to dissolve the sugar. After the 20 minutes baking time, I removed the dumplings from the oven and poured the syrup around the edges. I sprinkled a bit more cinnamon on top of the dumplings and returned them to the oven to bake another 13 minutes. Delicious! This is an easy recipe and one to take on a camping trip or vaction at the beach when I don't want to drag a whole lot of ingredients.

Clone of a Cinnabon

Very tasty. I had to let them raise for over an hour. The frosting is delicious. I baked them as instructed 400 degrees for 15 minutes. Some of the centers could have used additional time. Next time I will do as someone else suggested and bake at 350 degrees for 20 minutes.

Blueberry Breakfast Sauce

Love this sauce. So quick and very easy. The right amount of tanginess and sweetness. I served it over cheesecake and have plenty for pancakes in the morning.

Aunt Teen's Creamy Chocolate Fudge

Very smooth and tasty. I made one mistake. I forgot to add the third cup of choc chips while the mixture was still in the pot. I added the semi chips after I had poured the mixture into a pan. Fortunately, the mixture was hot enough to melt the chips. Would you believe it all turned out so smooth...foolproof fudge and very easy to do.

Cowboy Oatmeal Cookies

A great recipe to use up odds and ends from the pantry. I followed another member's suggestion using an extra 1/2 cup of oatmeal and used 1 cup of butter. I added chopped macadamia nuts and a dash of vanilla. Very tasty...soft in the middle and crispy around the edges. I used my convection oven with baking temperature of 350 degrees.

World's Best Potato Salad

A potato salad similar to PA Dutch style hot lettuce dressing. I will cut back on the sugar next time and use a 1/4 cup instead of the 1/2 cup. The dressing is plentiful so you can almost double the amount of potatoes used. The potatoes will absorb some of the dressing too. I watched the video to see how quickly I should put the ingredients together for the dressing. It was helpful.

Quick Yeast Rolls

Made these tonight to go along with "hunter stew" - smoked sausge with boiled potatoes in a beef broth. They were delicious. I've made rolls using the Pillsbury hot roll mix and these taste so much like them. I was a bit confused after I viewed the video. If the dough doesn't have to be kneaded, why turn it out on a floured surface? Can the dough be spooned directly from the mixing bowl to the muffin tin? Next time I will try this and see what happens.
