Easy Pumpkin Muffins

These are very easy as far as ingredients go. I added about 4 teaspoons of applesauce because the batter looked too dry. It took a while to spoon the batter evenly into the cups. I thought the taste was ok, but the hubby and co-workers loved them. Cream cheese frosting helped the taste.

Grilled Sea Bass

Leave out the olive oil! I followed the advice of the other reviewers who stressed the importance of the oil, but it made the dish...oily. I'd make it again without the olive oil.

Rump Roast Au Jus

I used a smaller cut of meat--1 1/2 lb-- since it's just two of us so it takes less than half the time. I stuck to the intent of the recipe, but didn't use chili powder or cayenne since I don't keep them around. Instead, I used onion powder and steak seasoning with the other spices. It was delicious! My husband and I are both picky especially with lower quality meats, but this is worth a try.

Eggplant Parmesan

I salted the eggplant first for about 30 minutes and patted it dry with paper towels. The only other adjustment I made was more garlic. My cloves seemed small, so I used 3. I don't normally eat eggplant, so I don't have a lot to compare it to, but it was pretty tasty. My husband at 3/4 of it.

Cheesy Eggplant Casserole

I followed the recipe exactly and did not care for it. My husband seemed to like it. The flavors of the stuffing mix competed with the Italian seasoning.

Mexican Lasagna

I used a 10 oz can of rotel in place of the can of diced tomatoes. I also followed other recommendations to add onion to the beef while it's cooking, then stir in some refried beans. With the gluten-free taco seasoning from Trader Joe's, this dish was HOT! My hubby and I both enjoyed it and are taking the leftovers in our lunchboxes tomorrow.

Flourless Chocolate Cake II

Sausage Casserole

As is, I would rate it about 3 stars, but it could be a 4.5. It wasn't as flavorful or as moist as many casseroles are. It definitely needs salt and pepper. I'll probably add more eggs next time as I used the 6 jumbo and it still didn't taste very egg-y. I may also brown the onion with the sausage next time. I definitely enjoy that there is no bread, and everyone who ate it liked it.
