Slow Cooker Chicken Marrakesh

Trust in the slow-cooker! This dish was too bland because I listened to everyone who said they added extra broth in the last hour. I even doubled the spices when I did it, but it was already too watered down. I had to toss sriracha all over it to get some flavor in there. I would like to try this again without (1) adding the extra broth and (2) freaking out about the sweet potatoes. The sweet potatoes were hard all the way up to the 4-hour mark, at which point they turned out perfectly. I panicked the last 30 minutes thinking it would be a flop with hard potatoes, but they softened up nicely just before the finish line.

Broccoli Casserole II

Loved this! I recommend doing what other have done: swap out the processed cheese for 1.5 cups of extra-sharp cheddar. I threw in other veggies as well (some chopped red and green peppers) and it was amazing.

No-Peek Beef Stew

Banana Banana Bread

I baked it in mini loaf pans. It made four. I decreased the temp and cook time a little and baked until toothpick came out clean. They are a tiny bit dense/heavy, but they are delicious!! Second try: Again, I made 4 mini loaves by cutting the time to 30 mins. Added walnuts to 3 and chocolate chips (mini) to 3 to get some variety. Turned out beautifully! As others suggested, I added vanilla, nutmeg, and cinnamon. The bread is very moist. Anyone who ends up with a brick definitely over-stirred. Confession: I ate an entire mini loaf myself with a glass of milk as soon as they were cool. oops!

Grilled Jalapeno Tuna Steaks

This recipe would be great if the cooking time weren't so horribly off. Tuna steaks cooked 7 minutes per side are like giant pieces of thick plastic. Go with 3 minutes per side on the grill and check them to see if that is about what you like. Also, double the amount of olive oil so that the marinade can spread across both sides of both tuna steaks.

Thai Peanut Butter Chicken Wraps

Awesome, quick weeknight meal! I used whole wheat tortillas and reduced fat Jif to lighten it up and broccoli slaw with carrot to bring in some heftier veggies. It was delicious. Like others, I cooked the chicken myself and used shredded chicken. That way we were sure to have enough.

Quick Peanut Butter Cookies

Love these! Highly recommend adding 1/8 c. flour and chilling before you bake these -- as others have said in their reviews. Not sure why some people have trouble with this recipe turning out. Perhaps they aren't following the basic order for cookies? (egg and sugar 1st, then PB, then dry ingredients) They don't look done at 9 minutes, but they are. Take them out! I tried adding chocolate chips to half of the batch and it only dried out the cookies. The PB is such a strong flavor that you can't taste the chocolate chips. As someone else mentioned, these are the cookie equivalent of flourless cake (which I love). So they are rich and dense and full of flavor! Don't expect the typical giant, dry, crispy, mild PB cookie. These are for real PB lovers!

Slow-Cooker Barbecue Ribs

I made these per the recipe, including making the sauce as listed, and it made my husband speak in French to his plate. He was beyond happy with them. The meat was falling off the bone and the spice had a good kick to it. I was liberal with the Worcestershire, chili sauce, and hot sauce to bring out the spice and it was perfect. I used the same method to make a BBQ sauce for chicken on the grill and everyone loved the sauce. They couldn't believe I made my own BBQ sauce!
