Kulfi

Great recipe, almost like my mom's. We use one can each of the ev. and condensed milk, 8oz of cool whip and 2 pieces of bread. Also I've added pistachios and almonds minced to the recipe. Another great idea is adding food coloring, you can stage freeze different colors for a rainbow kulfi effect too.

Aunt Mary's Eggplant Balls

This was pretty easy, kind of messy but got great reviews. I DID add chili pepper flakes and a bit more salt and break crumbs. Friends of ours ate this with a falafal yougurt/dill sauce in pita bread. Next time i'm going to try the balsamic vinger/chili pepper steam/cooking suggestion by one of the other reviewers.

Cream Puffs

This was a great and easy recipe!!! My first time with cream puffs and using a pastry filler thingy. My husband who is a gourmet cooking snob was so impressed! :) I have a small oven and did several batches. I did find some of my batches did fall. I think making sure you cook the puffs longer and making smaller balls helped keep them puffy. I also used instant pudding. I ran into some trouble using the pastry filler for the first time but realized that I was using too small of a point, switched to a bigger point and after that it was easy. I made them the night before a tea party, filled them the day off and got rave reviews. I had some for my co-workers the next day and they were great then too!

Cornbread Stuffing Southern Style

This was very easy and very good! It has a nice twist of sweet and spicy. Even my fiance and his friend who don't like stuffing really enjoyed it. We ran out of onions so I had to leave them out and i added a bit more paprika. i'm not sure if making the cornbread ahead of time, letting it and then adding the broth might make it keep a bit more structure, but I'm thinking of trying that the next time.
