High Altitude Banana Chocolate Chip Cookies

These cookies were excellent! Like other said, they are like eating banna-chocolate muffin tops! Soooo good! We did as someone suggested and used 3/4 c of both sugars. We used raw evaporated cane juice and it wasn't as sweet as we thought it should be (yes, we tasted it raw!) so we added some raw honey to sweeten the pot. I would say we added 1/3c of honey. Worked great and didn't mess w/ the texture at all...they were sweet, perfectly sweet (not too much, not too little). We also used whole wheat flour and mixed it for a while, as suggested by others. I make my own baking powder (out of baking soda/cream of tartar) and it worked just fine. These are a big hit and we are eating them up wicked fast! :) Thanks...making these again for sure!

Sunday Morning Lemon Poppy Seed Pancakes

These pancakes were amazing! I've never had lemon pancakes and they are so good-my 5 kids just loved them! We live at a high altitude (above 9K) so I only added 1 tsp of baking powder (and made my own since I was out....2 parts cream of tartar + 1 part baking soda). They puffed up nice and the lemon flavor was wonderful! I used one small lemon for juicing and 2 whole lemons for zesting...we also put in the pulp from the lemon we juiced. That made them very lemony and really helped the lemon flavor come out. We topped them with raw honey and butter. We will def. be making these again! Thanks for the great recipe!

Turtle Bread

I made this with my 5yr old son. It is super easy to make and we had so much fun making it together! Came out very cute and it is so good. So good. Like a giant, soft biscuit! I couldn't stop eating it. We brushed it with butter a few minutes after it came out and that made it so soft. Next time we will use the egg wash and sea salt. Mmmm! Great recipe, thanks for sharing! Easy to do with kids and fun and cute, too! Be sure you put raisins in before it rises the last time (after you shape and form) so they stay in. My son insisted on adding all sorts of claws after it rose..and they were pushed out and burnt. lol

Chocolate Chip Banana Bread I

This is the.best banana cake! Yes, it is more like a cake...and came out just lovely in a bundt pan. Thanks for all the great tips...followed them and it came out wonderful! (especially coating chips w/ flour..works great!!) Would make it again...I've already made it twice! Oh,and my 5 children loved it...huge hit!

Easy OREO Truffles

wonderfully delicious!!! And true to it's name, it was very easy to make these balls of goodness. My family loved them yesterday...so much that there wasn't room left for cake, pie, cookies, etc! I used the tip about keeping our hands clean and wet, worked great, along with the slotted spoon method. I can't wait to make these again...you can do so much with them and really express yourself! I had quite a few people (including kids!) ask me for the recipe. Big hit. :)

Chocolate Chocolate Chip Cake Cookies

My 7yr old son made these cookies for a homeschool "lesson". He did it all alone and these are seriously the BEST cookies we have ever had! They are like little chocolate handheld cakes and taste amazing! Really...these are an easy and very good cookie to bake with your children. We ran out of cocoa but hand pudding on hand. We used 2/3 c of pudding and cut back the sugar to 1c of raw sugar. Still came out wonderful. We have an oven with a mind of it's own..so we only needed to bake them 9 mins. and let them "cool" on the sheet for 1-2 mins. My son says he can't wait to make these for Santa!! :)

Rice Crust for Pizza

This was a great and different alternative to a flour/shortening crust! I actually used it to make a veggie pot pie..and it worked great! I was worried about it, but surprised and happy to find the end result SO good! It has a different taste and texture..so keep that in mind. I did use spices while cooking my rice and added more when mixing the egg and cheese in. I baked it for a few mins. before filling with veggie mixture and adding a "top" crust...and sprinkled cheese on top of that when it had 4 min. left to bake. A trick I learned...to get the crust to form for this I had a bowl of clean water and dipped my hands in and dried them off before forming (otherwise it would stick and not mold for a pot pie crust). That really worked and helped me out so much! Have fun..this is great and my children and I hope to make the pizza next! :)

Amazing Whole Wheat Pizza Crust

By far the BEST ww pizza crust I have ever made. Tastes great and I followed the great advice and used 3 1/4 c ww flour w/ basil and oregano as well. My kids loved it and asked for it the next day! thanks...great recipe I will share with all of my friends :)

Fluffy Whole Wheat Biscuits

Great biscuits! I also used some fresh garlic and cheese and they were really good. In the words of my 5 yr old son..."these biscuits are awesome!" We will make these again, for sure.
