Quick and Easy Pimento Cheese

tastes JUST like Fresh Market's pimento cheese that they sell for $6 (at a fraction of the cost) if you use thickly grated sharp cheddar only.

Buttercream Icing

I love this recipe modified, but as is, it is TOO SWEET! The first time I made it, I followed others suggestions and used more butter than shortening (3/4c to 1/4c) and half the sugar, and it was amazing! This time, I used the even amount shortening and butter and 3c of sugar, and it was too sweet for me. But, this is coming from someone that doesn't like 80% of the frosting/icings out there. So, take it for what it is worth.

Spinach Basil Pesto

we left out the cheese as instructed to freeze it (we had a huge crop of basil to use up), and without even trying it with the cheese, it is so delicious! i am sure it is even better with the parm, but we will save some fat and leave it out.

Baked Ziti I

Best Ziti that I've ever had! Cook it covered to keep it moist. Be sure the onions are cooked all the way through before adding the beef (ours were a little crunchy, even with extra time to get soft before browning the beef). I accidentally only used one jar of spaghetti sauce, but even still, it was amazing! I am sure the extra sauce would've made it even better.

Apricot Chicken I

as I was making this, I thought to myself that these ingredients sound disgusting together. fortunately, what sounded bad together was great! i served it with rice pilaf with chopped dried apricots and don't recommend that. the sauce is sweet enough and flavorful enough to only need plain rice (brown or white).

Chicken Florentine Casserole

This was delicious! I followed the advice of other reviewers and cut the chicken into strips. I cooked the spinach and mushrooms in a little butter and garlic, then cooked the chicken in a little butter. Put them in the dish. Then, I combined all the ingredients for the sauce (with slightly less butter and garlic since I had used up some in previous steps). The creamy sauce does not need to be added in layers. Pouring it on top is fine. It works it's way down while baking. I did substitute half the half n half for skim milk to cut some calories, and it was still perfect! Highly recommend this!

Hearty Lentil Soup

This was REALLY delicious. But, you absolutely need more broth, even if you like it chunky (which I do!). I had doubled the recipe and ended up adding 2-3 cups more of vegetable broth. Didn't change anything else.

Quinoa and Black Beans

This was AMAZING! I left out the additional salt and pepper; it really didn't need it. We put these in tortillas with guacamole, and the non-vegans added cheese. It was so delicious! Even my husband, who doesn't love black beans, loved it!

Cha Cha's White Chicken Chili

This was more like soup than chili. It tasted really great (though I cut back on some of the spices, as I don't love spicy things). But, it wasn't thick like I think of when I think of chili.

Chicken Pot Pie IX

I followed the recipe exactly EXCEPT I used thigh meat and I did not have celery seed, only celery salt, so I just swapped the celery salt for the salt it called for (left out the celery seed, obviously). It was amazing! However, it took a long time to make this with all the chopping. I would allow 2 hours or so from start to serve. I doubled the recipe so that I could do the work once and enjoy it twice. Froze the second pie.

Awesome Honey Pecan Pork Chops

This was so yummy! I served it with mashed potatoes and cooked apples (cooked in honey, cinnamon and water), and my husband couldn't get enough. I did cook the pork chops with about a fourth of a large onion, but I threw out that part because my husband hates the texture of onions. I just did it for the flavor, and it was a great compliment to the sweetness of the honey. I did add a little salt when I was heating the pecan honey sauce.

Easy Shepherd's Pie with Garlic Romano Potatoes

This was such a hit! I left out the tomatoes because I thought it would make it too soupy (plus we don't love cooked tomatoes). I also used frozen corn, peas & green beans (about half what it called for) instead of canned. It was VERY yummy! My husband wants me to make the potatoes by themselves in the future!
