Banana Oat Muffins

I made the substitutions that others recommended: half brown sugar, half whole wheat flour. I substituted the oil for 1/4 cup applesauce and 1 1/2 tbsp oil. Also added 1/3 cup semisweet chocolate chipits and 1/3 cup chopped walnuts. I substituted 1/2 cup of the milk with sour cream and adjusted both the baking soda and baking powder to 1 1/2 tsp. They turned out well. Baked a little faster than I thought. Could use more banana taste, perhaps more bananas next time.

Poppy Seed and Banana Muffins

These turned out very bland and definitely not sweet enough, even with very ripe bananas. I tried to save the recipe by adding a sugar topping after they were baked: dip the muffins in 1/4 cup melted butter, then dip in 1/4 cup of sugar mixed with 1 tsp cinnamon. It helped add some sweetness but still not enough. I also tried putting half the poppy seeds as some people had recommended but I think the full amount would have been better.

Molasses Spice Muffins

I followed the recipe but made 1/2 cup buttermilk instead of powdered. These were a bit too "holiday" tasting for me... a bit like gingerbread. Also not sure if all that molasses sat well with me! The texture was good though.

I followed the recipe but used 3/4 cup sugar and added 1 tsp vanilla extract. I also sprinkled some oats on top. These were great! I'll be making these from now on.

Poppy Seed Lemon Loaves

I also went for the healthy options. I substituted the egg with 1 banana, 2/3 cup milk instead of yogurt, same amount of canola oil for butter and I didn't have almond extract. I used the zest and juice of 1 whole lemon. I baked them as muffins at 350 degrees for 18-20 mins. Turned out GREAT! I will be keeping this recipe :)

Sweet Pepper Pasta Toss with Kale

Cinnamon Swirl Bundt Coffee Cake

I accidentally used only 1 1/2 cups all-purpose flour but it turned out excellent – very moist and fluffy. I made it a second time and added 1/2 cup chopped walnuts to the sugar/cinnamon mix and as others suggested I made extra sugar/cinnamon, almost double. I baked mine in a 9" springform pan, 350ยบ for 45 mins. I also made a drizzle on top as someone suggested: 1/2 cup confectioner's sugar, 1/2 tsp vanilla, 1 tbsp milk.

Raspberry Coffee Cake

Very good! I substituted sour cream instead of yogurt, and added an extra 2tbsp since the batter was very thick. This one's a keeper.
