Pear Bread II

We've enjoyed this so far, I did as another suggested and used all the batter to fill a bundt pan. Baked it for 70 minutes and it was perfect. The pears I used were fresh, but still pretty hard, so they stayed together well. I did add about a 1/2 t ground ginger, think next time I'll try fresh. I replaced half of the oil with applesauce, mostly because I had an almost empty jar taking up room in the fridge. Last thing I did was to use about one third whole wheat instead of the all-purpose. I think next time I'd like to try adding some cardamom too.

Tuna Noodle Casserole from Scratch

This was great! My boys, 8 and 6 didn't complain during dinner, which is success in our house. I did have to make a few changes since I didn't have any mushrooms. I increased the celery and added half a grated carrot, as well as a little chicken soup base while sauteing the veggies. Will certainly make again with mushrooms next time.

Grilled Tri-Tip with Oregon Herb Rub

I am making this for the third time in two months it is so tasty! I use my mortar and pestle to grind up the herbs. I also prefer hickory chips when I smoke the meet after searing it. Thanks for the recipe.

Slow Cooker Lemon Pepper Chicken

This was good, better for us had I not overcooked it which happened because I used two Cornish hens, not a whole chicken. I cooked on high for an hour then on low for 4 hours or so. I also added 1/4 cup white wine to the hens at the beginning. I will try this again, but with a chicken!

Caramel Popcorn

One tip is that after you pop the corn, shake the bowl to help settle the few unpopped kernels. Then carefully using your hands scoop up the popped corn into another bowl, trying not to disturb what has settled to the bottom. I trash the uppopped and small hard popped corn along with the husks that have fallen to the bottom of the bowl. I pop into an 8qt bowl then scoop into a 5qt, once that's filled I then pour it all back into the 8qt for mixing. Also you can reuse the parchment paper several times. I have been using this recipe for several years to rave reviews. I have co-workers trying to convince me to package and sell it!

Whole Grain Waffles

These were wonderful! I had to make a few subs since I didn't have some things on hand, banana for the applesauce, oat bran for the wheat germ and olive for the canola. Served with homemade blueberry sauce and fresh blackberries, yum!

Sour Cream Pork Chops

I like to read reviews before I make anything so with that being said I did what many other suggested buy upping the seasoning. I added the extra seasoning to the sour cream where I felt like I had more control than in the flour. I used beef broth because I didn't have any chicken. Last I added about 2 oz cream cheese with the sour cream, others suggested cream of mushroom but I didn't have any of that either! Served with steamed fresh broccoli and pasta, my family gobbled it up.

Irish Potato Candy

Little sugar balls, the cinnamon makes them. I tried with cocoa on the outside and still good but not as striking for sure. I also made some with the cocoa and mint extract, but the mint flavor wasn't strong enough, maybe next time I'll just mince the mint and make "potatoes with chives" candies!

Blueberry Strata

We loved this, to the point where my husband mentioned it for DAYS after the fact. I used frozen wild blueberries that I found at Fred Meyer, they were much smaller but more intense in flavor. I used just a little less cream cheese and didn't bother with the syrup but sprinkled sugar on top instead.

Pesto Chicken Penne Casserole

This was so good, my two boys (6 & 4) even gobbled it up! I did sub a little, I used fresh roma tomatoes diced, and a little less pesto since what was in the fridge seemed a little concentrated, and I tore up the spinach leaves. I made this before I left for work so all that needed to be done was to pop it in the oven until hot. I wonder it if freezes well?

Ruth's Grandma's Pie Crust

OH My! This is the best crust I've ever made, and I've done more than my share. It rolled out easy, went together quick. I used non-hydrogenated shortening. The recipe makes enough for three single crust pies, or two loose lattice topped. So now I have some ready to go in my freezer. Thank you so much for this recipe!

Baked Omelet

This was yummy, even my 5 and 3 year old ate it! I added more ham, less salt, some fresh minced chives and grape tomatoes sliced in half. I also sauteed the ham in a nonstick pan to dry it out a little and brown it.

Homemade Vanilla Pudding

Parmesan Sage Pork Chops

Made this last night and it was delicious! I had fresh sage and dried lemon zest, pulsed it in the food processor with a leftover homemade whole wheat hot dog bun and the parm so everything was the crumbs were the same. I did bake it on a wire rack like another poster suggested. Moist and crispy, my husband was raving about them this morning.
