This was delicious. I added a little olive oil mayo with basil and sauteed the mushrooms first. Even my picky kids gobbled this right up!

Jefferson Davis Pie

This is a nice basic recipe for Jefferson Davis pie. The terrific thing about this pie is that it's so customizable. If you've never had it, it's difficult to explain the taste, but I'll try. It's sort of like a pecan pie minus the pecans, with a candied vanilla-rum flavor. Complicated, right? I further complicate things by adding a pinch of cinnamon, nutmeg and ground cloves to the mix. Doing so changes the taste to something closer to a pecan pie without the nuts crossed with a pumpkin pie minus the pumpkin. Also, for this recipe, be sure to use two deep dish pie crusts (there's going to be a whole lot of bubbling going on in the oven) and also cover your crusts with foil because they will burn easily given the lengthy cook time.

Baked Ziti I

This recipe is phenomenal. Do as others suggested and be sure to add the sauce on top of the bottom layer of noodles so they don't dry out. I have three sons and a husband who are always thrilled to see me pull this out of the oven. I've never gotten anything less than rave reviews from anyone who's eaten it. I've also never witnessed anyone eat just one serving! Thank you Colleen!

Black Bean Pizza

It's hard to believe something so easy can be so healthy and delicious. I tripled the garlic, and because I didn't have zucchini, I added a handful of mushrooms, a small jar of black olives and half an avocado. The sauce left in the pan should (like another reviewer mentioned) absolutely be reserved for dipping because it's incredible. Thank you so much for this recipe. It's probably not real kid friendly, but who cares- parents need a treat now and then too!

Chess Cake

I have a major sweet tooth but this is so overwhelmingly sweet that even I can't stomach it. If you're determined to make this, I suggest cutting it into one inch squares and holding off until you have a very large bbq to attend. It went to waste at my house.

Chewy Coconut Cookies

Oh man these are good! I only had sweetened coconut on hand, so I cut down on the sugars by half cup and that worked out well. I also used half butter/half shortening and doubled the vanilla. Everyone loved these- they are my new favorite cookie. Thank you for sharing this gem of a recipe!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Thanks, lovestohost, for a terrific recipe. My family went nuts over these- kids and adults alike. I used chocolate cake and chocolate frosting and these were just amazing- over a long weekend with extended family I had to make them twice.

Spaghetti Squash Saute

I followed the recipe exactly and it was just too rich. Spaghetti squash is rich on its own, but the butter/margarine push it over the edge. I would not make this again.

Tantalizing Turkey and Blue Cheese Meatballs

These are delicious. I doubled the bleu cheese and breadcrumbs, used one whole egg instead of whites and also subbed worchestershire for soy because it's what I had. Also, I cooked these on a wire rack sprayed with oil which I then placed on a cookie sheet so that the fat could drip down. I may as well toss my old meatball recipe- they pale in comparison.
