Gingerbread I
This was phenomenal! My mom used to make gingerbread and I was craving some one day-I went with this recipe because it seemed so easy, and it was! Result was a very moist, semi-dense, slightly chewy on the outside gingerbread that our whole family enjoyed (and devoured)! I put about 3/4 tsp ginger and 3/4 tsp cinnamon and it was flavorful without being overpowering. Also used coconut oil in place of the shortening-just to make a bit healthier. You can tell when this is not done and when it is done. Mine took right at 30 minutes(time probably varies depending on the oven used). Pull it as soon as its no longer jiggly in the middle. I will use this again and again!!

Easy Cashew Sea Salt Toffee
Make sure not to use salted cashews!! This came out great-easy to follow instructions, everything came out just right-but WAYY too salty! I added some extra chocolate on top to cut the salt a bit, which made it edible, but wow was it salty!

Cracked Sugar Cookies I
These are fantastic!! Crispy on the outside-soft and chewy on the inside! I was running low on margarine, so I used half margarine and half Crisco. added the flour a little at a time and measured it carefully-and came out with a very soft, not at all dry, dough. I also rolled the balls (which I measured in 1 and 2 TBSP) in sugar before putting on the pan. Take these out of the oven immediately when they are all crackled on top-cool in pan for a few minutes, then move to rack to cool. Best sugar cookie I've ever made!!!
