Spaghetti Sauce IV

I think this is a great base. I'm not a big fan of spaghetti but my husband sure is, so I decided to figure out sauce. I definitely took other people's advice and added a can of tomato paste. I also added extra seasonings to my taste like an italian blend and I also only used about 2 tablespoons of olive oil to brown the garlic. I cut the water in half too....I also decided to use whole canned tomatoes and then crushed them in my slapchop. I liked the chunkier tomoto pieces, and I also only used one 28 ounce can as there is only me, my husband and my 2 year old but i kept everything else the same and it was sooo flavouful. I have made it with and without ground beef but when I added the ground beef(1 pound) I found that there wasn't much sauce and I doubled everything I had done. Also, I usually am in a rus so I have never made it to the 2 hour mark but its always good!

Refried Bean Enchiladas

So Yummy! What a great idea! I was searching to find something quick with ingredients I had at home. I wasn't very fond of the cottage cheese idea but one reviewer suggested cream cheese and boy were they right!! I sauteed garlic and onions like others suggested and then added the refried beans and 1/2 cup of cream cheese, half a cup of cheddar cheese and a few spoonfuls of sauce. (I ended up using a store bought enchilada sauce that I had on hand to save even more time but next time will try out the recipe sauce) I also added two chopped up chicken breasts because I am doing a workout routine that requires lots of protein, very good but I will definitely try it without too, the mix was soo good on its own. Then I spooned some sauce into the bottom of the pan, and on top of the tortillas and topped it all off with the remaining cheddar. I made rice to go along and added a bouillon cube and then mixed in the remaining sauce to make it seem more mexican! voila!

Chicken a la King I

Simple and Superb!! Even when I am missing ingredients like, pimento, I can still pull this together, not to mention when I am in a super rush I just eyeball measurements and its always great! I don't like green peppers so I never use them and instead of pimento I often get roasted red peppers from the anitpasto section in the grocery store. I also always use fresh mushrooms!
