Chai Tea Mix

When warm weather arrives, a girl's thoughts turn to iced chai lattes... I love this mix, it has saved me both money and calories by enabling me to skip Starbucks. I like my chai very spicy and not too sweet, so I only use 1 C of sugar and use heaping measurements of all the spices, plus 1/2 tsp white pepper, 1 heaping tsp allspice, and 1 tsp anise seed. Rather than using instant tea, I just use a teabag and add the mix after it's finished steeping.

Banana Pudding IV

This pudding is DIVINE! I followed the instructions/ingredients on the foodtv.com recipe ("Not Yo' Mama's Banana Pudding"), which uses more bananas and Pepperidge Farms Chessman cookies. YOU MUST REDUCE THE AMOUNT OF SWEETENED CONDENSED MILK!!!! I used 3/4 as much, and I think I'll reduce it more next time. I cut the recipe in half to fill an 8 x 8 pan, but I used 3.4 oz French vanilla pudding and 3 oz cream cheese for convenience's sake. I added an extra layer of bananas between the top of the pudding and the top layer of cookies, and I think I'll add a layer in the middle next time. My dad loves banana pudding, and he can't stop eating this!! I want to use the pudding recipe itself (no nanas/cookies) to make a "dessert pizza," using ready-made chocolate chip or sugar cookie dough as a crust and fresh fruit as toppings.

Deep Dark Chocolate Cake

I used half boiling water, half strong coffee. Doubling the recipe yielded 48 cupcakes, which I baked for 14 mins & then frosted with Caroline's Chocolate Fudge Frosting. The cupcakes were UNBELIEVABLE - so moist, absolutely perfect. Remember: it continues cooking after you take it out of the oven, so if it looks done in the oven, it'll be overcooked once it cools (and chocolate recipes are best undercooked anyway)

Caroline's Chocolate Fudge Frosting

Delightful! Smooth, creamy, and the chocolate flavor's not too intense, so it nicely compliments the deep dark chocolate cupcakes on which I used it. Just one recipe frosted 48 cupcakes. Honestly, I would characterize it as "fudgy," but it's definetly delicious. It gets four stars because of personal preference - I honestly missed the tanginess that cream cheese gives chocolate frostings.

Cookies 'n Cream Cake

I used this recipe to make 24 cupcakes. I filled them with Betty Crocker's Whipped Chocolate Frosting, frosted them with BC Rich & Creamy Vanilla, sprinkled them w/ crumbled oreos, & stuck a half oreo in the top of each. Not elegant, but fun. Three stars because, even though it's convenient, nothing can overcome the chemical taste of boxed mix/prepared frosting.

Aaahh! Potato Soup

I used four potatoes and omitted the potatoes from the au gratin package. The soup seemed rather bland, so I added about 3 oz of grated mozzarella and 1/8 cup of dried minced onions. MMmmmm...cheesy! Three stars because of the original blandness of the recipe.

Dark Chocolate Cake I

Fabulous! I scaled the recipe to 4 servings to make cupcakes (I ended up w/ 13). Moist, deep chocolate, delicious! They're great unfrosted. I can't wait for an excuse to make the cake with Carol's chocolate cream cheese frosting!!

These are the best chocolate chip cookies. I recommend using 1 cup dark brown sugar and 1/2 cup white sugar for even better results.

Banana Banana Bread

Absolutely fabulous! I added 1 tsp of vanilla and 3/4 tsp cinnamon. It's moist, delicious, and full of banana flavor. My dad couldn't stop eating it!

Chantal's New York Cheesecake

My mom requested a cheesecake as her mother's day present this year. This recipe is absolutely fabulous and so easy to make!! I used "lite" sour cream and 24 oz cream cheese & 8 oz 1/3 less fat cream cheese. I baked it at 325 degrees for 50 mins (w/ no water bath), and it turned out brown on the top...but it didn't crack! It's creamy and delicious; my mom loves it!

Brown Sugar Pound Cake I

Perhaps it's better right out of the oven, but I found this cake to be rather bland. Personally, I think it would benefit from cinnamon chips or a cinnamon crumb topping. It didn't seem to be anything special.

Cream Cheese Cut-Outs II

Nannie's Hot Milk Sponge Cake
