Chai Tea Mix
When warm weather arrives, a girl's thoughts turn to iced chai lattes... I love this mix, it has saved me both money and calories by enabling me to skip Starbucks. I like my chai very spicy and not too sweet, so I only use 1 C of sugar and use heaping measurements of all the spices, plus 1/2 tsp white pepper, 1 heaping tsp allspice, and 1 tsp anise seed. Rather than using instant tea, I just use a teabag and add the mix after it's finished steeping.

Banana Pudding IV
This pudding is DIVINE! I followed the instructions/ingredients on the foodtv.com recipe ("Not Yo' Mama's Banana Pudding"), which uses more bananas and Pepperidge Farms Chessman cookies. YOU MUST REDUCE THE AMOUNT OF SWEETENED CONDENSED MILK!!!! I used 3/4 as much, and I think I'll reduce it more next time. I cut the recipe in half to fill an 8 x 8 pan, but I used 3.4 oz French vanilla pudding and 3 oz cream cheese for convenience's sake. I added an extra layer of bananas between the top of the pudding and the top layer of cookies, and I think I'll add a layer in the middle next time. My dad loves banana pudding, and he can't stop eating this!! I want to use the pudding recipe itself (no nanas/cookies) to make a "dessert pizza," using ready-made chocolate chip or sugar cookie dough as a crust and fresh fruit as toppings.

Caroline's Chocolate Fudge Frosting
Delightful! Smooth, creamy, and the chocolate flavor's not too intense, so it nicely compliments the deep dark chocolate cupcakes on which I used it. Just one recipe frosted 48 cupcakes. Honestly, I would characterize it as "fudgy," but it's definetly delicious. It gets four stars because of personal preference - I honestly missed the tanginess that cream cheese gives chocolate frostings.
