Cranberry Orange Loaf

I modified the recipe, and MINE only came out to be 3 stars. If I had actually followed the recipe, it might be higher. Instead of orange juice and zest, I used a can of drained mandarin oranges, and it made the dough a little dense. I also had to decrease the cooking time by almost 15 minutes. I did not make the glaze, because I used dried cranberries and assumed it would be sweet enough already, and it was.

Luscious Spinach Artichoke Dip

I bought the ingredients without actually having a recipe to follow, and then found this one. It was easy to make and was gobbled up at a party. I used fresh spinach because the store was out of frozen, so that was a pain, but still yummy. I also used the entire block of cream cheese like others did, and fresh minced garlic. I like it to be a bit cheesier, so I threw in a cup of pre-shredded Italian blend cheese, and fresh grated parmesan on top.

Salmon Cakes II

Good flavor, though my hub didn't like it with canned wild salmon; we'll try fresh next time. I, too, added mayo as a binder, dusted with cornmeal and baked instead of pan frying. The cheese and Worcestshire aren't overwhelming but add a nice savory flavor. We will definitely make these again as our go-to salmon cake recipe!

Apple Squares

I made this for my volleyball team pasta dinner and the girls gobbled it up. Like many suggested, I doubled the recipe without doubling the topping and made it in a 9x13. I quadrupled the apples (but left out the nuts) so I had to up the cooking time a little, but it came out perfectly and I will definitely make it again!
