Benny's Famous Jalapeno Poppers

I make poppers all the time but always use pickled peppers instead of fresh peppers. I like the addition of the corn. My brother will add crushed peanuts to the cream cheese mixture - not my fave, but it is good.

Tangy Sweet Potato Fries

These didn't not come out for me very well. I tried them in the oven on a pan covered with foil and they stuck to the foil - even with the foil oiled. Took them off the foil and they finished okay. Finished the batch by frying. You really have to watch them or they will burn. Part of the problem was that I couldn't get an even cut because the sweet potato is hard. They were okay, but not great and Huny didn't give me a thumb's up to keep them on the menu.

Strawberry Salsa

I had some leftover strawberries from a sangria I made yesterday and made this salsa with the rest except I used what I had from the garden. Regular red cherry tomatoes, black cherry tomatoes and yellow pear tomatoes. I also added a couple of hot banana peppers and one japaleno. The hot bananas weren't too hot and added mostly flavor. Next time I'd add a little bit more jalapeno for just a little bit more bite. I put in everything else this called for, except the olive oil. I served this as an appetizer to our supper of shrimp and salmon on the grill and a green salad. Something I'd definitely make again!

Mom's Cucumber Salad

This was very good. I added a sliced small onion to it as well. I served this with flautas with cheese and salsa and it was perfect against the spice of the salsa.

Sweet Banana Bread

I made this exactly as the recipe is and it came out really good. My only problem is that I have a real old oven and I have to watch the baking time, so I left it in for maybe 5 minutes too long, but now that I know I'm making it again today and I'm sure it will be even better.

Peach Salsa

I thought this was a great dish! The only thing I changed was I didn't add the green bell pepper because I'm not too crazy about that taste. I could have used more peaches for more peach flavor and next time I'll be adding some jalapenos or some hot banana peppers for a little zip. I served this over grilled chicken and rice.

Tipsy Peaches

I did not like this very much. I served this over ice cream and to me the whiskey taste overpowered the peach taste. My husband liked this dish, so if I make this again, I will use some other kind of liquor - maybe some flavored rum.
