Japanese Zucchini and Onions

Orzo and Shrimp Salad with Asparagus

Followed the recipe except that I did not use the shrimp shells and I subbed apple cider vinegar for the white balsamic because that's what I had on hand. This was a cool, refreshing salad for a hot day. I made it the night before which allowed everything to come together. I still felt it was missing a little something- I might up the basil next time, but I love fresh basil. Also, I bet cherry tomatoes would be great in this too. Thanks for sharing!

Crunchy Tuna Sandwiches

This was certainly different than your usual tuna salad. I was intrigued by this because I love tuna salad and I love water chestnuts. I followed the recipe exctly except for subbing fresh cilantro for the parsley- it's what I had on hand. I did enjoy the crunch of the water chestnuts, but I felt there were too many for my taste- it seemed all water chestnut and not much tuna. If I made again, I would use about half the can. Also, it was a bit bland for my taste. I would definitely spice it up a little more. Thanks for sharing!

Tropical Turkey Meat Loaf

Really good and a nice change of pace. I used only 1 lb of turkey (my mistake) and subbed oats for the breadcrumbs and thought it was great! Hubby was skeptical but took seconds and said it was really good. We will make this again. Also, since I only used 1 lb it was done in 40 mins. Thanks for sharing!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

These are perfect! I respectfully disagree with the reviewer who said it was all due to the ice bath- I have always done the ice bath and still had difficulty with the shells. Done this way, the shells literally slipped right off. Never again will I do them any other way. Thank you, thank you!

Very Veggie Lasagna

This was very good. However, it was huge! It almost didn't all fit in my 9x13 pan. Definitely a wonderful way to get lots of veggies. Mine turned out a bit watery, but I think that was my fault, not the recipes, because I used homemade sauce (Nanny's Spaghetti Sauce from this site) and also assembled it the day before, which I think made the cheese mixture get runny. But overall, very yummy veggie lasagna!

Nanny's Spaghetti Sauce

This was wonderful and used pantry staples, which was great. I did saute an onion in evoo first and added garlic to that then everything else. The crushed tomatoes I had on hand were Italian style and I also added some dried basil. After tasting I added one more Tbsp of sugar. Thanks for sharing! With these changes, definitely a five-star and a keeper!

Goat Cheese Stuffed Tomatoes

I made these as written. However, althought the taste was quite good, the proportions were off as others have suggested. I didn't even have very large tomatoes, but the filling did not come close to filling them up. However, great flavors- would recommend getting more goat chese and making extra filling. Also, as someone else said, they don't reheat well, so only make as many as you need at a time. Thanks for sharing your recipe!

Fiesta Pinwheels

These are so great and easy for a party or potluck. I have made them as written and they are excellent, but I have also made various adjustments depending on what I have on hand (i.e. one time had no olives or green chiles so left them out, used half cheddar and half monterey jack). Very adaptable and forgiving...and everyone seems to love them!

Parmesan and Basil Chicken Salad

So good! I halved the recipe and it is seriously good if you like these flavors, which I do! Only change was that I didn't have any celery so I used celery salt and I didn't want to dirty my food processor so I did not puree. I just served on a light bun with lettuce...delicious! I've had it for lunch three days in a row! Thanks for sharing!

Garbanzo Bean Chocolate Cake (Gluten Free!)

For a healthier option, this is quite good. It's not terribly sweet, but I found once I knew what to expect I enjoyed them. Hubby never suspected what was in these :). I did as cupcakes and greased them with cooking spray and baked about 25 minutes. Thanks for sharing!

Risotto with Asparagus

This was my first attempt at risotto, and it was amazing. Thank you! I made a third of the original recipe, and it did require more liquid- probably about 4 cups for 1 cup of Arborio. I did not boil the asparagus but sauteed it. I also sauteed some bay scallops to add to this and also added a clove of garlic to the onions. I even forgot the parmesan cheese at the end and hubby still said it was the best thing I've made- and he loves my cooking! Delicious and will definitely use again and again. Thanks!

Thanksgiving Flavored Turkey Burgers

Really, really good! I halved the recipe and didn't have any celery so when I sauteed the onions using cooking spray I added a bit of celery salt and poultry seasoning. Amazingly good! I could take or leave the cranberry sauce, but the whipped cream cheese is delish!

Pineapple Chicken Tenders

Wonderful! Such a great marinade for chicken. I also grilled up pineapple slices and served with some brown rice. The leftovers were perfect in "Microwave Fried Rice" from this site. Thank you- will definitely use this again and again!
