Rich Chocolate Frosting

I adjusted the serving size to 8 and still ended up with way too much for my 9 inch round cake. I had only about 5 tbs of cocoa powder left, but even so it was still very chocolatey and delicious!!

Cajun Style Blackened Snapper

Hot Spinach Red Pepper Dip

Sean's Falafel and Cucumber Sauce

Baked Lemon Chicken with Mushroom Sauce

In addition to the original recipe, I used portabello mushrooms, onions, one full cup of chicken broth and a dash of white wine to make the sauce. My husband absolutely loved it!! It was a great dish! Another note, the more lemon the merrier!

Grandma's Lemon Meringue Pie

I made this for my in-laws the other day, and they absolutely loved it. My mother-in-law has been using her own lemon meringue pie recipe all the time but thought this recipe is even better than her own! The only change I made was substituting white sugar with Splenda.

Double Tomato Bruschetta

This is a great recipe! I found the sun dried tomatoes in oil comes in a jar in the pasta aisle. I personally think the sun dried tomatoes is absolutely delicious and important to perfecting this recipe.

Corned Beef and Cabbage II

In addition to the ingredients called for in the recipe, I also added two tbsn of yellow mustard ( a secret ingredient "stolen" from my friend's Irish mom). Results: FANTASTIC!!
