Spicy Stuffed Chicken Thighs

I browned the chicken and onions on the stovetop, plus I put the extra bulk italien sausage right into the pan. Then I added the other ingrediants, covered it, and cooked it for 1 hour. Finally, I added 1/2 bag of egg noodles and chicken stock and cooked it again on the stove top until the noodles were done. A great one pot meal.

Chickpea and Pasta Soup

I tailored the original recipe: saute 2 cloves garlic (or more), one thinly sliced carrot, and three chopped chicken thighs in olive oil; add two cups crushed tomatoes and simmer 15 minutes; add two cups chicken broth, one can rinsed chickpeas, and a handful of chopped cilantro and simmer another 20 minutes. An inexpensive one pot meal my husband enjoyed. Try it with a side of cornbread.

Coleslaw with a Difference!

Really good and easy. My husband loved it and already asked me to make it again! I want to tailor the ingrediants slightly so that it doesn't have as much liquid leftover after chilling...but that's my complaint about most coleslaw.

Sausage and Lentils

My husband liked it, but I think it was pretty bland. Maybe curry powder as well as cumin. I served it over rice, but I might try again over couscous.
