Clark's Quiche

Reviewed: May 6, 2012
The taste is great! Not low fat, but I will try using low-fat substitutes next time. I must say that even using the deep dish pie crusts, the filling is still almost too much. I cut back on the half and half a pinch and used 7 eggs and was JUST barely shy of overflowing. Prep took a long time, but would be easier with leftover bacon (if there is such a thing in your house). Overall, super quiche!

Green Beans Italiano

Reviewed: Mar. 24, 2011
This is such an easy side dish and oh, so good. I didn't measure, just sprinkled the dry herbs onto the sauteed onion and garlic, and then added the blanched beans and quartered tomatoes. Quick heat through, toss, and serve. I grated a bit of fresh parmesan cheese on top. These were wonderful!!! I imagine with fresh herbs they would be elevated to a higher level. Would be perfect for picnic/potluck fare. Thanks for sharing!

Silver's Savory Chicken and Broccoli Casserole

Reviewed: Nov. 10, 2010
I really enjoyed this one. I used mini bowtie noodles and fresh steamed broccoli. The secret for adding flavor to my chicken is you season and flour boneless skinless pieces, and then brown them in a little olive oil and butter. Cube or leave whole. The sauce for this casserole is like making gravy, and you can add whatever seasonings (like poultry seasoning) to make it more flavorful. This made a large quantity. Leftovers were great. I prefer mixing it all together as opposed to layering. It did not turn out dry at all. Thanks for the awesome recipe for a casserole that does not require a can of soup!

Veggie Vegetarian Chili

Reviewed: Nov. 10, 2010
Yum! This is some good vegetarian chili, on the mild side, but can easily be altered to your liking. I omitted the carrots and corn, added a zucchini, and drained my beans before adding. I also added about a cup and a half of water. Let simmer for longer than 20 minutes (more like 40-50 minutes) and the flavor was really good. Baby portabella mushrooms were great in it. Can't wait to have the leftovers for lunch and dinner later in the week!

Delicious Ham and Potato Soup

Reviewed: Sep. 4, 2010
This is great soup and it came together in less than a half hour from start to finish. One review suggested adding shredded carrots, I grated about 2 small carrots in. It made the soup very pretty. Topped with cheddar cheese and it tasted like a baked potato. I like this recipe as a base--you can easily add or substitute ingredients!

Pasta, Broccoli and Chicken

Reviewed: Jul. 10, 2010
This was excellent. I used fusilli and lightly steamed my broccoli. Great spring or summer pasta dish. Very light and flavorful. Thank you!

Mother's Ham Casserole

Reviewed: Jun. 25, 2010
This is really good comfort food! Increase the onion, celery and carrots, or add other veggies of your choice (peas or broccoli would be good). Also try cracker crumbs instead of bread crumbs for the topping. Will definitely make again, this would be suitable for dinner or maybe even a brunch dish.

Banana Crumb Muffins

Reviewed: Mar. 23, 2010
My family's favorite! I can't believe how easy and delicious these muffins are! Thank you so much for the outstanding recipe. I have to buy extra bananas to ripen just so I can make these, they are that good.

Texas Sheet Cake V

Reviewed: Mar. 3, 2010
YUM! This is very moist cake. The flavor developed overnight and was even better the next day. Danger, though, it is hard to stop munching on. I made it without reading the reviews and wish I had read about the frosting. My frosting sat for a while during the baking and cooled, so when I spread it on the warm cake, it was thick and I had to go little by little to cover the cake. Be sure to prep the icing about 10 minutes before you pull the cake out of the oven, it will have a much smoother appearance and presumably be easier!

Soft Christmas Cookies

Reviewed: Dec. 13, 2009
So tasty! I was able to finally make sugar cookies with my kids thanks to this recipe and the recommendations of reviewers (I used 3 c. flour and butter and baked at 350, use extra 1/2 c flour for rolling). Do be careful not to overbake these and not to roll too thin, as previous reviews say. Even my 2 year old could cut these out! Thanks for the holiday memories!

Deluxe Mashed Potatoes

Reviewed: Nov. 12, 2009
Great flavors. A little different than the normal mashed potatoes. I didn't have chives but that would have made it taste even better. I added 2 tablespoons of butter instead of 1 and used white/yellow potatoes with skin on. Would be wonderful with red potatoes or russets as well.

Weekday Pot Roast and Vegetables

Reviewed: Oct. 27, 2009
Patted 3# pot roast with salt, pepper, garlic salt and dusted with flour, browned in pan with a little olive oil and a little butter. Put carrots, celery, onion, red potatoes and garlic in slow cooker, added browned roast, topped with Campbells gravy (2 cans), splashed in some red wine and added more salt, pepper, and basil. Cooked on low for 8 hours. House smelled awesome while cooking. Everyone enjoyed eating it, leftovers were great too.

Sugar Cookies

Reviewed: Oct. 24, 2009
Yum! My 5 and 2 year old daughters helped with this recipe, it's so easy and quick! We used "I can't believe it's not butter" sticks for cooking and baking (something I have never used) and King Arthur flour. Not sure if it was the butter substitute or the flour, or simply the awesome recipe, but MAN!! These cookies ROCK! I have to make 40 for a Kindergarten class party, and we are having trouble making so many since we keep eating these as soon as they are cooled. Good thing the hubby is at work today ;) Thanks for the "keeper" sugar cookie recipe, Helen.

Oven Fries

Reviewed: Aug. 26, 2009
This is a great base recipe. I make these with olive oil, a teaspoon of fresh minced garlic and a pinch of nutmeg and black pepper. I omit the cayenne since the kids don't like the heat. The sugar is a great addition! I check them every 15 minutes during cooking, and flip halfway through and increase cook time to 40-45 minutes. Enjoy!

Jordan Marsh Style Blueberry Muffins

Reviewed: Aug. 4, 2009
Made these today with my 5 year old. She did most of the work, and they came out beautifully!! They are delicious, in fact, my kids kept saying they tasted "like fresh from the bakery"! Will make plenty more of these to share with friends and family.

Crisp Sugar Cookies

Reviewed: Jul. 21, 2009
Rolled out and cut nicely. Easy recipe, but very bland and too salty. I added 1/2 tsp. additional vanilla extract to make it more flavorful, but it's still too bland. Definitely add icing or sprinkles for flavor. Will keep looking for another perfect sugar cookie recipe.
