My favorite things to cook
My favorite kind of cuisine to cook is Italian...it's who I am. I enjoy baking and when I cook I usually mix several recipes to suit my families taste.
My favorite family cooking traditions
My favorite cooking traditions revolve around our Easter baking traditions (ciatones, cavizones, easter breads, biscotti etc...). They remind me of holiday gatherings at my grandma's. I also loved helping my grandma make homemade cavatelli and homemade bread. As a kid, it was amazing to watch her pour all the ingredients on her kitchen table and use her hands to mix everything together then use her handmade rolling pin to roll her dough out. I've tried it, but I like my ingredients in a bowl (so much easier to clean up :)
My cooking triumphs
Cooking for my sister's baby shower and cooking for a charity dinner. Both involved italian food as the main dish with several appetizers, sides and desserts.
My cooking tragedies
Ugh! The first was an attempt at spaghetti squash.Won't try yhat again! My most recent was cupcakes for my son's school project. They involved hiding gummy worms in the cupcakes, nothing like the taste of burnt gummy worms. Luckily, I only made half the batch with the gummy worms the rest turned out great so we frosted them and put the gummy worms on top!

Grilled Asian Chicken
The family and I were looking for a a grilled chicken recipe that was a little different. This was quick and had a nice taste. I did double the marinade

Coconut Poke Cake
I have no choice but to give this 5 stars. I served it at the superbowl party and everyone LOVED it! It was so moist and delicious. I did use the coconut cream and a half can of sweetened condensed milk (I think a whole can would have been fine) I also frosted it with real whipped cream. I served the cake with a raspberry sauce that looked beautiful with the white and tasted delicious. (1C no-sugar added frozen raspberries and 1-2 tsp sugar and mashed them with a fork)

Holiday Brie en Croute
Delicious and fancy :) I cut the brie in half and spread the preserves. I use apricot and then I chop up some dried apricots and layer with toasted sliced almonds. An elegant appetizer!
