Coconut Lentil Soup

This is a really excellent base recipe. I doubled the amount (four servings just didn't seem enough in this Jewish household) and added a carrot and parsnip. Amped up the garlic and ginger and added cumin, chile powder and cayenne to the seasoning mix, as well as a serrano chile, keeping the seeds. Nice pungent yet subtle mix. Yum!

Minestrone Soup I

Outstanding! As recommended by others, I doubled the tomato paste and used spinach rather than cabbage. I also threw in some green beans and extra pasta, and used Better than Bouillion rather than veggie stock. A keeper for sure!

Lentil Soup

Oh, this one is insanely good. I've tried it with more vinegar and less vinegar and I have to say, the original recipe works for me. Serve with some garlic crusty bread -- bon appetit!

Stuffed Peppers My Way

One of my old standbys. After reading the other reviews, I've reduced the roasting time for the peppers to 15 minutes and also cut the amount of feta. No salt needed here -- the feta will do the trick. I also like to use different-colored peppers for visual appeal. Enjoy!

Liked this one! Fun to cook and even more fun to eat. We modified it by using far less salt (a dash rather than a tablespoon) as well as a lot less oil. It's slightly too spicy -- I'd turn down the heat the next time. But was definitely well received around here!
