Easy Chicken Tetrazzini

Not a true tetrazzini. Tastes like a chicken casserole.

Tuna Patty Sandwiches

Reviewed: Dec. 24, 2010
These were excellent and VERY filling! I also added garlic, fresh cracked pepper, a little lemon juice, and just a little dill, as suggested by another commenter and, then put a little mozzerella between the patties. This makes two very satisfying sandwiches.

Rice Casserole

Reviewed: Dec. 20, 2010
This was really excellent! I substituted water and one packet of onion soup mix for the can of soup and also precooked regular rice as many others did. It turned out great in the microwave. The only thing I didn't care for was the butter - there was entirely too much. Decreasing 1 stick of butter by 1/4 would most likely be fine. The casserole was literally swimming in butter.

Cracked Sugar Cookies II

Reviewed: Dec. 17, 2010
These are sweet and they turned out a little less soft than I expected. I used butter flavored Crisco for the shortening and they wound up with a buttery flavor that didn't quite fit the taste of the cookie.I might make these again using regular shortening, and baking them slightly less.

One Dish Chicken and Rice Bake

Reviewed: Oct. 3, 2010
This was exactly what I expected. It took 5 minutes to make from washing the chicken to popping it into the oven, and it tasted great. I would add a little more seasoning, and possibly some broccoli.

Slow Cooker Tender and Yummy Round Steak

Reviewed: Sep. 30, 2010
I really wasn't too crazy about this recipe. It's not bad; I just didn't like the taste of the meat and sauce. If I were to make this again, I would use meat tenderizer on the round steak first, because the meat was still a little tough.

Lemon-Lime 3-Herb Pasta

Reviewed: Jun. 20, 2010
This is a nice light pasta. I used fresh parsley, lemon balm, and basil. This would be really good reducing the water and adding a drizzle of olive oil. Also, this would be good with a little added zing- maybe with a little sprinkle of parmesan.

Five Minute Ice Cream

Reviewed: Apr. 11, 2010
Mmmmmm - Awesome!!! I used a bag of frozen blackberries, and this ice cream was beyond delicious. The longer it sits in the freezer, the thicker it becomes. I had a hard time blending the berries in the blender, so I dug out my mini food processer. Doing a handful of berries at a time worked well. Then blend the rest of the ingredients together in the blender. I can't imagine any fruit not tasting great with this recipe.

Delightful Strawberry Dessert

Reviewed: Apr. 7, 2010
This dessert was wonderful!! I was afraid it may be a little difficult to make since it has quite a different crust, but it was very easy to make - crust included. It was truly delicious! I will be making this again.

Quick Weekday Pasta

Reviewed: Jan. 16, 2010
I doubled this recipe and added a bit more seasoning. I substituted 1 can of chicken noodle soup and a little sour cream, plus I added a little swiss cheese with all the chedder. I thought this recipe was extremely bland, but it may have been due to the extra ingredients I added. It really needs onions and more cheese for sure.

Hot and Sweet Ginger Drink

Reviewed: Oct. 9, 2009
I'm not crazy about this one. I love ginger, brown sugar, and honey, however, a whole cup of brown sugar was way too much. You couldn't even taste the ginger anymore. My suggestion would be to cut the brown sugar down by half.

Peppered Shrimp Alfredo

hTis was excellent! I didn't have mushrooms or cream but I added carrots, and I substituted parmesan for romano. I also added ground walnuts to it which gave it a wonderful flavor. I'll make this again in a second!

Easy Cream of Chicken Rice Soup

Reviewed: Jan. 14, 2009
This recipe was great. I had to substitute a few ingredients, but it turned out so well. I used Uncle Bens Wild Rice microwavable pouch and dried minced onion. I also added a few spices since I didn't have any Old Bay seasoning. I will definitely be making this soup again.
