Best Irish Soda Bread I have EVER had. Better than my family recipe, better than restaurant versions, and better than bakery versions. I don't add caraway and I add less raisins. Great for dinner with St. Paddy's day, but I make two loaves just so I can have a buttered slice every day with my cup of coffee in the morning.

Fried Cabbage and Egg Noodles

I read the recipe to hubby and thought wow, wouldn't that be great with our pork roast tonight? But we didn't have cabbage..... so we improvised with frozen brussel sprouts in butter sauce, added carmalized onions, and lots of fresh cracked black pepper. It turned out great, and next time I will try the recipe with real cabbage (not baby cabbages) and maybe add a little sour cream instead of the browned onions, because they made it all little TOO rich.

Strawberry Pretzel Salad

I make a similar salad but I flavor the cream cheese filling with a little cocoa to make it a chocolate strawberry pretzel salad, except my mom always called it jiggle-fluff pie. I find that it needs to be eaten quickly because the pretzels will get soggy otherwise, so I sometimes halve everything and make it in a 8x8 pan for just me and hubby. Always a hit though!

Creamy Cinnamon Rice Pudding

Excellent, creamy, rich rice pudding. It did thicken up for me, but not really enough. Next time I will halve the recipe (it make SO much we couldn't eat it all) and an extra egg. Also don't forget if you think its not thick enough in the pan, it will get thicker when it sets in the fridge.

Irish Chicken and Dumplings

I used one can of cream of chicken and another of cream of celery and it was excellent, next time i might try cream of mushroom or cream of asparagus. Easy chicken and dumplings! The only thing it needed was a little heat. This will be my chicken and dumpling recipe from now on!

Oatmeal Peanut Butter Cookies III

These are so amazing its impossible to tell you! I was short on cash for father's day last year so I made my dad a couple dozen of these - i am now on strict orders to do the same thing every year. Wonderful wonderful recipe. I halve the filling recipe for one batch, or leave it as is and double the cookie recipe.

Golden Yam Brownies

These were great! But they fell apart a bit and they were very chewy. I think next time I might play with the proportions and try making muffins with them and frosting them with cream cheese frosting. I also added dried cranberries for a tart bite.

Super Fudge Brownies

Don't get me wrong, I have had fudgier brownies, but I made this recipe with a no-name $0.50 brownie mix, and it made them not only edible (they were fairly dry and gross with just the package directions) but very very moist and fudgey. I also tried this once more with sour cream instead of apple sauce and that worked out very well too. Thanks for a great recipe!

Wonton Soup

I used double the amount of shrimp to the same amount of pork.They came out a little to sweet so I backed off on the brown sugar a little. I used chicken base to make a light broth and simmered it with whole garlic cloves and a few coins of ginger. I removed these before cooking the wontons in that liquid. I did the same thing when making the frozen ones. They did not get gummy at all. I now make this recipe in double and triple quantities to freeze and cook whenever the mood strikes. Absolutely the best I've ever had!

Beth's Spicy Oatmeal Raisin Cookies

I used all butter instead of the butter flavored shortening, and used a mix of apple pie spice and pumpkin pie spice to equal the total 1.5 teaspoons of cinnamon and ground cloves. I also used cherry raisins and dried cranberries, 3/4 of a cup of each. They came out so amazing and so chewy! This is definitely my go to recipe for oatmeal cookies!
