Cake Mixes from Scratch and Variations

I don't know how anyone can give this recipe less than five stars. This is the most moist cake I've ever made. I do use oil instead of shortening, and I usually make the yellow cake. It's WONDERFUL!! Also, very quick and easy to make. You'll never be able to go back to boxed mixes after trying this recipe. Thanks so much.

Divinity

As everyone in the humid South knows, you should NEVER attempt divinity in the rain. Well, let me tell you, I live in Alabama and I just made this recipe during a tropical storm with my French doors wide open...It turned out GREAT!! Amazing! I followed the directions exactly, except that I was not sure my thermometer was calibrated exactly right so I also used the ice water (hard ball) technique because it seemed like it was getting very close to the correct temp when my thermometer hit about 255. I stopped at 255, and it turned out just fine. For the person who said they burned up their mixer, you can avoid that by mixing well to the point were it starts cooling and thickening up, and finishing by mixing with a spoon. The whole point is to get it to cool down, and that is done by mixing it with air. Perfect recipe. I'll be using it again and again. Thanks!!

Crispy Cornmeal Drop Doughnuts

I'm giving these five stars because they are so darned quick and easy to make. The flavor is pretty good. They sort of taste like a spice cake, with a hush puppy sort of look and texture. I ate something similar recently at a Krystal's restaurant that were called "Sweet Bites". I have a Vitamix blender, so I put some granulated sugar and cinnamon in it and ground it up to the consistency of powdered sugar. I put the sugar on a plate, and just threw them on top of the sugar when they came out of the oil. I think my family is really going to like them (they are all taking naps right now!). Thanks for a great recipe!!

Baked Cream Corn

My family LOVED this recipe. I took it to a Father's Day meal as a last minute thought, and everyone ate it up. My teen who never, ever eats veggies or casseroles of any kind actually came back for seconds. I used the frozen tube-like package of creamed corn. Other than that, I made it exactly as written. Thanks for a quick, easy, great-tasting recipe!!

Creamy Rice Pudding

I made a double batch following the exact recipe, and it turned out really well. It took almost 30 minutes to thicken because I started with cold, leftover rice. Keep stirring, and it WILL thicken up. Great recipe. Not too sweet. The raisons add a sweet bite every now and again. Yummy!!

Goulash Supreme

The only change that I made that I added some chicken broth to thin it down a little. My entire family loved this recipe. They all went back for seconds and also said how much they liked it. Very unusual around my house, so I will be making this one again. Thanks for a great recipe!!!

Southern Fried Cabbage

I love this cabbage recipe because it's so easy and because the taste is wonderful. It's good with or without the bacon. It's so very fast to make and goes great with so many main dishes. Thanks for a great recipe.

Beef Stroganoff II

I rated this five stars because it was such a good idea to use mushroom soup in place of mushrooms. I never think to keep mushrooms on hand, so that substitution made this recipe so easy. I used eight ounces of sour cream. I also used ground beef rather than the beef strips, and it was really good. Thanks for a great recipe!

Fluffy Seven-Minute Frosting

This recipe is the best Seven Minute frosting recipe that I have ever tried. It was raining today, and it still turned out fine. Not grainy at all. Beautiful texture. Not too sweet. I added two tablespoons of Karo Syrup to the sugar mixture as it cooked, but I'm sure it would have been fine without it. I LOVE not having to beat the frosting while it is on the cook top. I'll use this one from now on. Thanks for a great recipe.

Bread Pudding with Whiskey Sauce III

Wonderful Recipe!! I was looking for a recipe similar to a bread pudding that I had at a fancy place in Monroe, LA. My husband and I both thought that this recipe was actually better. The sauce is wonderful! I did use rum rather than whiskey, though. I also cut the sauce recipe in half and it was more than enough. I poured the entire batch of sauce over the bread pudding when it first came out of the oven to let it soak into the pudding. I used a loaf of white bread and left the crust on. I used a 9 x 11" glass pan and it did rise to about an inch above the top, but settled upon cooling to be almost level with the top of the pan. The only change that I made was that I increased the cooking temperature to 350 and I cooked it for 60 minutes. It came out very moist and was a wonderful texture. I'll be cooking this one next time I want to show off for a family gathering. Thanks for a great recipe!!

Simple White Cake

I followed the recipe exactly as written. I did not really like it. It's more of an old-fashioned, dense cake. It was not really dry, just really heavy. Sort of in-between yellow and white. I won't be making it again.

Carolina Style Low Carb Barbecue Sauce

We live low carb and this is by far the best low carb sauce recipe that I have run across. My husband just loves it. I often mix it up and throw in some boiled or grilled chicken without even allowing it to sit overnight and it's wonderful. We always keep a jar in the refrigerator. Thanks for a great recipe!
