Pumpkin Muffins II

great! and the cinnamon and sugar sprinkled on top were perfect...I packed them in lunches and had them with warm homemade applesauce for breakfast ;)

Caramel Apple Dip

We had movie night at our house, and we spent more time around the bowl of apple dip instead of watching the movie. I did use heavy cream for half of the water....I'm pretty sure the recipe wasn't supposed to be low fat or for daily consumption ;) Super great! My husband doesn't have a huge sweet tooth, and the cream cheese gives it just enough zing, especially paired with granny smith apples.

Glazed Dijon Carrots

If it makes my husband eat carrots, you know it has to be good! They are awesome, and I tried them with a pale white carrot from the farmers market and they were SUPER!

Pumpkin Cake III

SUPER! I made it for my 4 year olds birthday for the more "adult" cake without icing. I made it in a bundt pan and cooked it longer and dusted it with powdered sugar. It was great. My son actually enjoyed it more than the homemade chocolate cake and icing I worked so hard on...sometimes less is more! ;)

Ginger Snaps II

The BEST ginger snap, definitely double the spices and I used butter instead of shortening! My daughter said they taste like heaven ;) Our road trip will be super with them on board!

Too Much Chocolate Cake

It was a really great moist cake. I made it for a staff birthday and dusted it with powdered sugar before serving. I think next time I will drizzle with something more, I am not sure what....caramel or just a simple sugar glaze for it to be perfect for us. I mean if you are going to blow the calories may as well go all out.

No Bake Cookies III

I made these as a kid with my mom and every once and a while I crave them. I didn't have any chocolate but I had Ovaltine for the kids milk on hand and used it instead and it still came out great! It just took a little more to get the flavor right. Great recipe and of course the kids loved them!

Chicken Piccata with Artichoke Hearts

A new easy favorite for our house. I tried it once without white wine and I have never had capers on hand, and it was great both times. Easy and simple....artichoke hearts, canned tomato, little onion, garlic, and lemon and dump it all on pasta. Great and easy to memorize.

Avocado Soup with Chicken and Lime

THIS IS OUR FAVORITE SOUP! We have fixed it 4 weekends in a row. Go easy on the lime. We served it with tortilla chips and with soft tortillas. I used a little rice in the pot the first time but it made yucky leftovers. I double it for leftovers and I use only 2 jalapenos for the kids sake. SUPER DYNOMITE!

The Best Meatloaf

I made it in my muffin tins, 3/4 full, and baked at 350 degrees for 30 minutes! The whole family loved them, even the kids!
