Flourless Peanut Butter Cookies

I made this recipe with cashew butter instead of peanut butter because my hubby is allergic to peanut. They are FANTASTIC! I cannot stop eating them! I made them with a brown and white sugar mix and added vanilla as some others recommended. WOW!

Spinach and Feta Pita Bake

I have made this at least a dozen times and its a wonderful light meal. Very nice in the summer time with the fresh tomatoes from the garden. I like setting out the toppings and letting everyone build their own mini pizzas how they like.

Super-Delicious Zuppa Toscana

This recipe is delicious and also very easy to reduce the fat content. I used all natural chicken sausage and turkey bacon from Trader Joes which really helped. Also could do lowfat milk in place of half the heavy cream. Replacing all the cream will definitely change the flavor, so I keep some of it in. Everybody loved this recipe!

Overnight Coffee Cake

As others have said, this makes a very moist tasty cake. The topping however was much too sweet for my taste (and I actually used less of the drizzle on frosting than the recipe called for). The sweetness made this taste much more like cinnamon rolls than coffee cake. Very yummy, just too sweet for my taste. I will make this again with much less of the brown sugar topping and use frosting drizzle sparingly.

Baked Pear

Everyone thought this was tasty. I used bartlett pears. There is no need to melt the butter in advance. I cut the pears in half and cored them and stuck the butter and brown sugar in the hole, drizzled honey all over and liberally sprinkled both ginger and cinnamon. I cooked it covered for an hour and thought it turned out perfectly. Very juicy and the house smelled like honey during the cooking. MMMmmmm....:-)

Pan-Fried Mustard Mayonnaise Tilapia

Really moist and tender with a good flavor, not too strong. Breadcrumbs stuck on just fine, just make sure your fish is dried on a paper towel first.
