This was AMAZING!!! I had a bad experience with quiche as a child, so I was a little hesitant about giving this a try, but I'm soooo glad that I did bc it was superb!!! I used a spray "butter" when cooking the spinach and I seasoned my spinach with garlic salt, and soul food seasoning, and I added fresh red peppers. I used a cheddar, and mozarella blend in addition to 5 cheese Italian blend, about 2 cups, and 6 eggs. I just began the South Beach diet, so this dish works perfectly. Thanks so much for the great recipe, I can't wait to heat it up for breakfast in the morning:-)
