Gourmet Mushroom Risotto
This recipe is amazing. It's very easy to make this recipe dairy-free as well. I substituted Smart Balance for butter and omitted the parmesan cheese. Even with these substitutions, the risotto turned out very creamy and flavorful. I agree with other postings, I did not use the full amount of mushrooms. But I did use more portobello mushrooms than white because I like the flavor of the portobello. This recipe is definitely worth a try.
