Marshmallow Fondant

this was my first fondant. it was super-duper sticky. definitely keep the jar of crisco ready. i also laid down a lot of corn starch to help me with kneading. i couldn't figure out how to get the rolled fondant onto my 10" double layer cake, so i ended up having to do two pieces, with a big crack down the middle. that was frustrating. it definitely tasted pretty good compared to other fondant. will use it again.

Black Magic Cake

Great recipe. I used water instead of coffee, since this was for a 3-year-old's birthday party. I multiplied the recipe by 2.5 in order to have enough batter for a round wilton 6" 2-layer cake and a round wilton 10" 2-layer cake. I'm a decorating novice, but I was looking for a heavy enough cake to support 2 layers on a 2 tiered cake with butter cream (special butter cream frosting) and marshmallow fondant, both from this site, and this one did a great job. I also used wilton's cake realase and got a very nice crust from this recipe!

Too Much Chocolate Cake

delish - i made these into cupcakes. 1. it made a LOT of cupcakes for me. I got 30 from one recipe. 2. it took longer to bake than a normal cupcake recipe. I started with my normal 18 minutes, but extended 2 minutes at a time until they were finally "toothpick clean" at 26 minutes. I baked at 350 as the recipe indicated. I also used 1/2 c. oil instead of 1 c. and added 1/3. c. milk. Not sure if that helped or hurt, but just in case you need that info. they are slightly soft for a cupcake, but i think when i get a nice buttercream atop it'll hold together. i'll also probably refrigerate the final product so it will be as firm as possible.

Veggie Casserole

I really like this recipe. I've made it 3 times now. The last time I omitted the soup, since I didn't have any on hand. I did add 1 tsp. of salt since I figured the soup would have been adding some savory saltiness to the dish. I thought it was just as good, just a bit less creamy. I also have never tried the green pepper, since the other reviews suggested not using it. I've also decreased the butter and the crackers (using reduced fat ritz instead of cheezits) - because in my 2qt dish I don't need more than 3/4 sleeve of crackers.

Poppy Seed Chicken Casserole

This is the chicken casserole I grew up with, except we leave out the cheese. One tip from years of making it for those of you who work outside the home full time: put the boneless skinless chicken breasts (frozen works great) in the crockpot with a cup of water on low all day... then you don't have to boil the chicken when you get home and it is so tender and easy to shred with two forks. Also, I used just 2 Tablespoons butter; it works fine for a sleeve of buttery crackers.

first time making brownies w/o a mix - FANTASTIC - THANKS! i didn't have honey so subbed karo syrup in the frosting, but had to add milk because i couldn't get the butter/sugar/cocoa to "combine". turned out great!

Chicken and Corn Chili

super easy and great! thanks! i added a can of diced tomatoes, because i love tomato. i also used black beans instead of pintos (just what i had on hand). i am gone all day and have to use my "10 hour" setting on my crockpot. it turned out perfect! chicken was tender. definitely a keeper in my house! if anyone's wondering - this is 2 weight watcher points per serving.

Summer Lasagna

awesome recipe to use up my garden veggies! thank you for this creative recipe! i tried to "sweat" the zukes like someone recommended, but it must not have worked well - my dish came out watery like the others. it wasn't a bid deal, though - i just spooned out the water when i got it out of the oven. honestly, my husband didn't know there weren't noodles! we added salad and toast and a glass of red wine for a delicious dinner. if anyone is wondering - this is 4 weight watchers points per serving!!!

Penne Pasta with Spinach and Bacon

i really liked this. i am usually trying to lose weight, so as i was cooking i decided to omit the oil to reduce the calories and fat. may have been a litttle better with it, but it was definitely not needed - the garlic cooked up great in the bacon grease. i used rotini because it was all i had. thanks!

Zucchini Cornbread Casserole

this was a great way to use up my garden zucchini! thanks! only change i made was to use 1/2 c cornmeal, 1/2c AP flower, and 1 t. baking powder rather than the corn muffin mix (didn't have that on hand). however - it came out pretty flat. next time i would use self rising flour!

No-Cream Pasta Primavera

very good - didn't have lots of the veggies - so used extra squash & zucchini - what i had. used canned tomatoes with onion& garlic instead of fresh. cut back on the oil a lot and ditched the butter. great base to make it what you want to - thanks!

This is a very good recipe. The only changes I made was to use all green pepper (didn't have the others on hand)and added a bit extra bread crumbs (as others suggested). It turned out very good!

Garlic-Lemon Double Stuffed Chicken

My husband and I loved this recipe! I halved the recipe, and then still went lighter on the cheeses and butter - to make the recipe a little more healthy . I also found that I had a lot of bread crumbs leftover (thrown away), so next time I'll go light on that, too. Will definitely put this one into the rotation for a treat!
