Surprise Banana Cake

Yes, this cake was more like a loaf bread, but it was delicious! I baked it in a loaf pan and added 15-20 minutes to the baking. I found that it was a little too buttery so next time I would either cut down on the butter or substitute a canola oil for half the butter called for.

Pheasant Breast Stuffed with Apples in a Cider Vinegar and Prune Sauce

Truthfully I didn't like the mix of flavors in this recipe. I liked the stuffing itself, although I thought it could use more seasoning, more of a mix of the sweet and savory. I think the recipe called for too much vinegar in the sauce - and overall I really didn't think the prune sauce complimented, but more battled with the flavors in the stuffing. I like the idea of this recipe, and maybe with some adjustments it could be very interesting.

Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini

The timing of this recipe was a bit off -I thought the pasta was cooked too much in advance, however the sauce on this chicken was to die for. Wonderful flavors! I lightly floured the chicken before cooking, and I served mine w/angel hair pasta instead of linquine but other than that I followed the recipe as it was written.

New England Potato Soup

I too added carrot and brocolli. I found it still a little bland - maybe because the recipe calls for milk instead of cream? Anyway I think it will be better the second day. It's defintely a recipe worth experimenting with.

Chicken Marsala Florentine

This was an easy, absolutely delicious recipe - I was looking for a veal recipe but I found this and substituted veal for the chicken. Served it with whole wheat pasta and asparagus. Will definitely make it again - pretty and tasty enough for company.

Veneto Chicken

Initially this seems too simple to be good, but the result is very tasty! I used boneless breasts, and I added some garlic to the onion celery mixture, but that's it. It's a great low fat recipe with lots of taste.

Wild Risotto

This was a little time consuming, due to precooking the wild rice. I would add more chicken broth or stock and less water next time to give it more flavor - otherwise it was great. I added chicken, some parmesan cheese and asparagus in mine.

Grandmother's Buttermilk Cornbread

This is the best corn bread recipe ever - it is between corn bread and a corn muffin, moist, a little sweet and "sturdy." If you, like me, like to toast your corn bread in a pan w/a little butter, this recipe makes the perfect bread for doing so!

Elegant Stuffed Chicken and Asparagus Bundles

This recipe was delicious. (I didn't make the asparagus though - just the chicken.) The stuffing was very tasty, a nice mix of savory and a little sweet from the cornbread addition. I did have more than enough stuffing for 2 breasts though. This is definitely a dish that it suitable for dinner guests but it's a nice everyday dish too. Adjustments I made : I put the veggies in a food processor before cooking as I didn't want any large chunks of veggies. I also added a little fresh tarragon to the stuffing and I put a small amount of chicken broth in the bottom of the baking dish for basting. (can use this to make gravy too)
