Asian Tuna Patties

My family asks for these every week...sometimes 2 or 3 times. My variations - double teryaki sauce, no garlic (didn't have it on hand, but I don't care for it much anyway), no cornmeal (I don't use anything to coat). SUPER!

Cream Cheese Frosting II

I made this wrong, but it was really really good. I used only 8 ounces of cream cheese and all the other ingredients stayed the same. I ran out of Vanilla before I got around to making the frosting for my strawberry cake, but it was still awesome. I am giving it a 5 because I'm sure it is with the vanilla. As I made it, it was, well about a 4.5 :-) I made filling for the cake with cheesecake instant pudding and whipping cream, but I really wished I had filled the cake with this frosting also. Next time, I certainly will!

Best Big, Fat, Chewy Chocolate Chip Cookie

I tried some others after this one and this is by far the best. I will go back to using this one. PLEASE PLEASE PLEASE watch them closely. They will easily over cook. I had to bake a few batches before I figured out the perfect time in my oven. 14 minutes for me, but I like my cookies almost "doughy" in the middle with a little crunch around the edges. They might not LOOK done, but after cooling, they will be perfect.

Soft Sugar Cookies IV

I am not a sugar cookie fan mostly because I prefer a soft chewy cookie...but I had all the ingredients and needed SOMETHING sweet :-) These were awesome...for a sugar cookie lol. I can understand how, for some, it may be a bit salty, but I didn't mind so much, although I will probably use less next time. Good cookie!

Cha Cha's White Chicken Chili

Really good! Definately cut down the peppers/cayenne. I'm a chicken so omitted the jalepanos all together and used 2 fresh chopped serrano peppers and 1/2 tsp. cayenne in a batch and a half (we wanted leftovers for work). The spiciness was good for my family, and for lunch today, it was just a TAD bit spicier than last night but still did not overpower the dish! Last night, those that wanted it spicier dashed a little more cayenne pepper in their bowl. I topped with Mexican four cheese blend shredded cheese, dollop of sour cream, and chopped green onions and served with crescent rolls. YUM!!!!!

Broccoli Chicken Casserole I

My family loved this as did I. I did not use 2 cans of Cream of Mushroom soup as suggested by other reviewers. Instead, I added 8 ounces of sourcream to the soup and mayo mixture. (don't do this unless you really like sour cream) But, 1 can of COM is definately not enough. Also, I used corn bread stuffing on top, cooked the broccoli in chicken broth, seasoned my chicken with garlic, old bay, and a little salt. SUPER!

Black Magic Cake

When I took this out of the oven, I couldn't WAIT to taste it, but I should have. I did wait until it cooled (well with the exception of what stuck to my fingers when I removed it from the pans). As soon as it was cool, I frosted, cut, served, and ate. I didn't feel any fireworks at all. It was really just okay for me (I watch too much American Idol!). So I cut 1/2 of the cake (3 layers btw), put it in another cake caddy to take to my elderly aunt, and put it all in the fridge. I got a little after 3 in the morning and decided I would try a small piece to see how I felt about it. It was AWESOME!!!! I think it just needs to sit a while. Also, it may be because I had tasted SO MUCH FROSTING when I did have my first piece, the sugar was so unappealing...I don't know. But nonetheless, I wish I hadn't already called my aunt and told her I was bringing her some cake before I realized how good it was!!! Well, I'm glad I did...I didn't need it anyway :-)

Jordan Marsh Style Blueberry Muffins

Okay, this was the 3rd blueberry muffin recipe I tried this weekend. The first, To Die For BBM, the second, some other I found on a blog with sour cream, and then this one. I won't be needing to find a 4th!!! I was so excited to have gotten it right this time! I used butter instead of shortening (personal preference). That was the only variation. Good recipe!

Asian Turkey Burgers

It was good, just missing something. Maybe adding teriyaki sauce or something will heighten the Asian flavor. But still good. I used green onions and garlic powder and had them on english muffins with fat free cheese slices and lettuce.

Baked Spaghetti

I gave this 3 stars because I didn't care for the ricotta cheese. I actually really like ricotta, but not in spaghetti. The parmesan and butter in the noodles tasted really good and I took others' advice and added a layer of sauce to the bottom of the pan. This really wasn't bad, but next time, I think I will omit the ricotta or use ALOT less.

Simple White Cake

DRY DRY DRY DRY!!! I forgot to add an extra 1/4 cup of milk to this as suggested by other viewers...so I am rating the recipe as written. The flavor was good and it was for a kid's party - usually, they don't notice things like that...but I did...and I was embarrassed. I will try again with the extra milk and taste test at home.

To Die For Blueberry Muffins

I followed this recipe to the "T" and it wasn't very good. I gave it 2 stars for the topping...but even in that, I used less butter. They were not sweet enough for the berries I got from the farmer market, were flat despite me using a very little bit of topping on each muffin, and there lacking in flavor. The texture wasn't all that great either. I may try again just to see if I done something wrong...but right now, I have another muffin recipe in the oven b/c my family was so disappointed that these flopped. If I try again, I will repost.

Fluffy Peanut Butter Frosting

I made the recipe as written. I like peanut butter...I really do as does my 11 year old - who, 'mind you, likes EVERYTHING sweet...and most everything not sweet. But even he said no thank you to a second cupcake. We did not care for this recipe at all. I guess you have to practically LOVE peanut butter to tolerate this frosting. I really wanted to like this...it's just overpowering on devil's food cake.
